THE FINAL CHAPTER
This summer sees the completion of the restoration
of Cliveden with the opening of The Cliveden Spa...
SPRING/SUMMER 2017
Email: [email protected] I www.clivedenhouse.co.uk
WELCOME
Dear Friends,
Greetings from Cliveden and I hope this finds you all very well.
My first few months at Cliveden have certainly been enriching as
I continue to discover the magic of this fabulous property, and
collectively as a team we look forward to the year ahead with great
relish as various components of the restoration of Cliveden finally
come together. The National Trust have finished the upper part of the South Terrace,
which looks magnificent in the early spring sunshine and provides a
wonderful platform from which to admire the Cliveden estate and the
rolling Berkshire countryside beyond. This is in conjunction with the
new gates which have been beautifully restored and erected at the
main Feathers entrance to the estate.
The highly anticipated renovation of the Spa continues to make
great progress and remains on schedule to re-open in June. It is an exciting time as we bring together the concept and define the
different aspects of the guest experience, and it will be a fantastic
corner of the estate which will certainly provide another dimension
to the Cliveden experience. Going into the summer season the
House and grounds will have seldom looked better!
In the House, André Garrett is creating wonderful new menus and we
have recruited a number of key positions to strengthen our brilliant
team. As the business builds so does our talented team, bringing a
good blend of experience, knowledge and passion to our service.
The Cliveden motto of “Respect the past, and perfect the future”
continues to serve us well!
We’re delighted to reveal some more plans for the coming year in the
pages ahead, and very much look forward to welcoming you into the
House to share some of them with you.
With very best wishes,

STAYING OVER
SPRING INTO SUMMER
From the South Terrace at Cliveden you can
enjoy one of the most beautiful floral display on
the whole 376 acre estate. On average it takes
15 days of intensive work by the National Trusts’
Head Gardener Andrew Mudge and his team of
gardeners and volunteers just to transform the
six-acre Parterre garden from its spring to its
summer look.
In the spring the displays are a mixture of bulbs and
bedding plants – 11,050 bulbs and 20,350 plants to
be precise, including varieties of Polyanthus, True
Blue and Deep Orange Pansy, Bronze Wallflowers
and Narcissus ‘Ice Follies’. All these plants are then
removed and the beds replanted for summer with
a further 30,950 plants such as Ageratum, Salvia,
Begonia, Marigolds and spider plant borders. Then
there are over 2.5 miles of hedges and 18 topiary
pyramids to keep trim and the lawn to mow and
the weeding and watering to be done.
Around the estate the Duke’s Garden project is
well underway, one of the first things to move was
the giant oil jar that traditionally blocked the view
when you rounded the corner in to this area of the
garden – do look out for it next time you visit – now
you see it …now you don’t. The National Trust are
also restoring the beautiful Blenheim Pavilion this
year, together with the Boathouse.
THREE NIGHT STAYCATION
With so much to see as the seasons change from spring into early
summer, take advantage of our special three for two short break
and enjoy a complimentary night’s stay at this amazing property,
which leaves you more time to explore all that Cliveden has to offer.

sharing a Club Room, what could be nicer?

POLO BACK ON THE MENU
Cliveden has a link to the game of polo that dates
back to Waldorf Astor, who excelled during his time
at New College Oxford in fencing and polo. Whilst at
Oxford, Waldorf became firm friends with Devereux
Milburn who went on to become one of ‘The Big
Four’ champion American polo players winning the
Westchester Cup six times.
We might not be able to guarantee you will reach
championship standard, but we can promise a fabulous
day and an exclusive insight into the world of polo at
the 72 acre privately owned Emsworth Polo Grounds,
just 20 minutes from Cliveden.
The home of Four Quarters polo, one of the UK’s most
successful polo teams means that a polo “learn to
play” experience at Emsworth is different from any
other. You will get the unique chance to “look behind
the curtain” to see and feel what a successful polo
organisation is like and enjoy facilities that are second
to none.
This is an authentic and hugely enjoyable introduction
into the sport of polo. A real hands on experience.
Instructors’ will give you the skills and confidence to
enable you to compete in a polo match. Schooling
you in the three fundamentals of riding, hitting and
rules. Whether you are looking for a once in a lifetime
experience or interested in taking the sport further,
this is the perfect introduction to the game.
The team consists of professionals who have played
at the highest levels bringing not only a wealth of
knowledge but also some interesting tales to boot.
Prices for a ‘learn to play’ polo experience
at Emsworth, which includes: all transfers
from Cliveden, riding experience,
equipment, lunch, refreshments, bespoke
players shirt, start from £499 per person.
Prices for additional lessons and riding
clinics and to create an extended polo
programme are available on request.
* No previous riding experience is necessary.
TALES OF THE RIVERBANK
The Cliveden Flotilla of lovingly restored vintage launches has
returned to its River Thames home ready for transporting guests on
their waterborne expeditions along this beautiful stretch of the river
this spring and summer.
In the experienced hands of the Captain, enjoy the gentle pace of
lazy days on the river, combined with first class cuisine and fine
wines creating a quintessentially English experience that will be
remembered with pleasure for years to come. The Cliveden flotilla is
available for charter for residents and non-residents alike, for periods
ranging from one hour to a whole day.
The Suzy Anne, built in 1911 and restored for Cliveden in 1986 won
first prize for the best professional restoration of a vintage boat
at the Henley Traditional Boat Rally and she is the flagship of our
flotilla accommodating up to 10 guests. The Belmont is a lovingly
restored 33-foot Thames slipper launch, built in the 1930’s she can

FROM THE CHEF
“I love the seasonal change of
spring, it brings an abundance of
new flavours and ingredients as the
countryside starts to warm up, here
I have chosen three great spring
ingredients that can be found in our
own countryside and paired them
with some lovely pasta macaroni’s,
a real treat”.
André Garrett,
Executive Head Chef
MACARONI, MORELS, WILD GARLIC AND AGED PARMESAN
Macaroni – Purchase fresh macaroni from your local
supermarket or pasta counter.
Morels and wild garlic – Trim the morels at the base and wash
them well in cold water, make sure they are clean right up inside,
drain and dry in a warm place on a cloth, trim the wild garlic
stalk and cut the leaf in half.
INGREDIENTS
Macaroni
Purchase fresh macaroni from
your local supermarket or pasta
counter.
Morels and wild garlic
Heat a large pan with water and a pinch of salt to cook the
macaroni, also heat a large frying pan, sauté the mushrooms
in 15g butter until tender, add the wild garlic leaf and the
mushroom sauce and bring to the boil, grate a good amount of
parmesan and set aside.
100g small morels
Make sure the water is a rolling boil, add a splash more olive oil
and one at a time add the macaroni’s, cook for 1 – 1 ½ minutes,
they should be firm still with a little bite, drain and shake off the
excess water, place into the mushroom mix and toss over, dish
onto warmed plates, with a little more parmesan and drizzle the
rest of the sauce around, serve immediately.
1 white onion sliced
50g wild garlic leaf
Mushroom stock
60g unsalted butter
½ leek sliced
500g small chestnut mushrooms
sliced
500ml chicken stock or bouillon
½ bay leaf
Mushroom stock – Heat a heavy bottomed sauce pan and melt
15g of the butter, add the onion, leek and mushrooms, cook on
a high heat and allow to caramelize and the water to evaporate
off, season lightly and when coloured well add the stock, bring
to the boil and allow to simmer for 30 minutes, let stand for
10 minutes then strain into a smaller pan, push hard on the
mushrooms to get out all the flavour in the stock, bring back
to the boil and reduce to around 300ml in volume, melt in
the rest of the butter and the cream and taste, correct the
seasoning as desired.
50ml double cream
Other ingredients
Extra virgin olive oil to drizzle

FAMILY FIRST
Cliveden is a great place to spend time with the family
in truly inspiring and beautiful surroundings. Despite
its imposing façade Cliveden is a very warm and
welcoming place for children, who are less fazed by

hiding behind the suits of armour and when they can
go out and play.
The 376 acres of National Trust gardens provide a
vast playground for our ‘pint-sized’ guests who love
exploring its secret paths and woodland trials, finding
freedom to roam and using their imagination to
create marvellous adventures and secret kingdoms in
amongst the maze and family-friendly gardens.
With spacious bedrooms being able to accommodate
additional beds for children and no charge for children
sharing their parents’ room, a family break at Cliveden
is very straightforward to arrange. During the school
holidays we have a special programme of activities to
keep the children amused, including special children’s
swimming times in our newly opening spa.

hotel Cliveden House,
representing both of their
iconic individuality and
celebrated level of quality yet
differing in location and offering
an city destination to escape to
in the capital.
The next seven months will see
the ongoing transformation and
expansion of the 600 year old
coaching inn unfold. As part of
this new vision for the hotel, we
have carefully woven the multiple
stories at The Lygon Arms into
the fabric of the new additions,
staying true to our roots and
celebrating the history and
heritage of the hotel as part of
this next chapter in The Lygon
Arm’s legacy.
With the recent renovations
already underway, we have a
wonderful opportunity to further
elevate the guest experience
and fulfil The Lygon Arm’s
enormous potential.
CHARITY NEWS

throughout the year, we also collaborate on selected
charity projects and are pleased to be associated with
DEBRA and their sporting challenge to raise awareness of the genetic
skin condition Epidermolysis Bullosa. The next Debra challenge is
at the Royal Berkshire on 11th May followed by another sporting
challenge at the Holland and Holland shooting ground in Northwood,
Middlesex on 15th September. With teams taking part in a series of
shooting challenges, lunch and a charity auction to raise fund for this
remarkable organisation that aims to bring comfort to those living
