Fonte Coffee Owner Launches Premium
Roasting Program

The owner of the Seattle-based roasting company Fonté Coffee, Paul Odom, along with master
roaster Steve Smith, is launching a new program called “The Coffee Vault” on July 18. The pair
will offer single-origin, limited small-lot coffee that will be roasted to order in one-pound
minimums after being stored in a zero-oxygen environment.

Beginning July 18, Fonté Coffee Owner Paul Odom and Master Roaster Steve Smith will launch
a new program called “The Coffee Vault.” These hand-selected, extremely limited small lot
coffees vary in price from $20 a pound and up, depending on the bean origin. Fonté will source
and purchase a specified amount of single origin beans which will be sent to the roasting plant
and placed in a zero oxygen environment to preserve freshness. These rare, unroasted beans will
be stored separately so each registered client can call or email Fonté Coffee with their weekly
order. Steve will roast-to-order a one pound minimum of the reserved micro-lot coffee, shipping
the following day.
A single origin, micro-lot coffee constitutes a very limited amount of green or unroasted beans.
The coffees are from a specific growing region and country, and may represent a farmer’s entire
harvest or a small lot separated from the overall harvest. The growers manage and maintain the
bean quality by hiring experienced pickers who will individually select coffee cherries at the
peak of ripeness. As a collaborative effort between the producer and roaster, these single origin
lots undergo a higher level of processing and sorting which adds to their uniqueness. A single
farmer or region may produce a number of lots varying in characteristics and qualities, and range
in size from as small as a single burlap bag weighing 132 pounds up to 2000 pounds.

sell out of these coffees within the first six months of each crop year. This new approach toward
