And why not? The area has all the ingredients necessary to cook up a thriving dining scene. It started back in 1972, when The Culinary Institute of America opened its doors to its Hyde Park digs, and began churning out superbly trained chefs (many of whom chose to stay in the area and open new restaurants themselves). The movement gathered steam in 1985, when Time magazine called Chef John Novi of High Falls’ Depuy Canal House “the father of New American Cooking.” But it was the more recent emergence of farm-to-table cuisine, and the resulting partnership among local farmers, chefs, and restaurateur s, which really helped propel the Valley into the dining-destin ation stratosphere. Whether you’re in the mood for pub grub with a craft brewed IPA, or a 32-ounce ribeye washed down with a bottle of Cabernet Sauvignon, the Valley has just the right eatery to fulfill your cravings, and wallet. Mountain views — and German cuisine — are the order of the day at Gunk Haus in Clintondale (www.gunkh aus.com). This gastro-pub sits at the base of the Shawangunk Mountains — or the ‘Gunks, as the locals call them, hence the restaurant’s unusual moniker; Schnitzel, Spaetzle, and strudel pack the menu here. The circa-1860 Vanderbilt House (www.vande rbilt-house.com), in Columbia County’s village of Philmont, was built as a hotel and restaurant for railroad employees. Today, it continues to serve, under the third generation, the same purpose — but not just for the Vanderbilts’ workers. The building sits on the banks of tree-lined Summit Lake, offering diners a tranquil landscape vista. Name Brands No need to travel to Manhattan: Restaurants owned by highly regarded chefs are popping up in the Valley at a steady rate.
