Dumoco® Dairy Enzymes
Dumoco® Dairy Enzymes are bio-catalysts with a spectrum of functions for enhancing dairy production processes as well as reaching
improved product specifications and specific product requirements. Dairy enzymes are applied for controling and accelerating
production and ripening processes of dairy products. Dairy enzymes take care for acquiring better and typical product characteristics

Dumoco® Chymosin
Chymosin (also known as rennin) is the primary active ingredient in rennet which has traditionally been obtained from calf stomachs
through acid-base extraction and purification. However, due to the growing demand of chymosin, alternative extraction sources
have been developed such as plant-based, yeast and microbial sources. Dumoco® Chymosin is obtained from Aspergillus Niger.
Chymosin is primarily used in the production of cheese.
Chymosin splits the casein protein of milk at specific point and thereby effects clotting: casein clumps together to form curd and
separates from the watery whey. Subsequently, the ripening process of cheese may begin.

The lactase enzyme breaks down lactose into galactose and glucose. Dumoco® Lactase is obtained using Kluyveromyces species
of yeast. Lactase is applied for the manufacture of lactose-free dairy products as many people around the world have difficulties
digesting lactose which is naturally present in dairy products. Moreover, icecream, yoghurts, milk and chocolate products enjoy the
intensification of sweetness and smooth texture by using lactase.
During cheese production, lactase transforms the lactose in whey into a sweetish mixture of glucose and galactose which becomes
a honey-flavoured syrup after purification and concentration. This syrup can be used for industrial production of sweets.

Dumoco® Catalase
Catalase is a natural enzyme originally found in the liver of animals but is commercially obtained today through the fermentation
of microbial sources. Dumoco® Catalase is obtained from Aspergillus Niger. Catalase splits hydrogen peroxide (toxic to cells) into
oxygen and water. The prime food application is the combination of catalase with glucose oxidase, used as a “preservative“ in
mayonnaise and other egg-based products.
Catalase finds its way in the production of certain type of cheeses as an alternative of pasteurization for preserving natural milk
enzymes which are desirable to the flavour and mouthfeel of typical cheeses. Catalase deletes the residues of hydrogen peroxide
which would otherwise inhibit the bacterial cultures required for the actual cheese production.
Dumoco® Lipase
Lipase breaks down milk fats (lipids) by hydrolysis into fatty acids and glycerine, converting the insoluble fats into soluble forms. The
process enhances typical flavours and aromas at e.g. cheeses, coffee whiteners and butters. Lipase is especially used at producing
feta, parmesan, mozarella and blue cheeses. Moreover it speeds up the cheese ripening process. Dumoco® Lipase is obtained using
Aspergillus Niger.
