• Serve Family-Style Meals
People want large, family-style portions
that they can share with others, the larger
portions provide leftovers to take home,
which is perceived as an extra value. If
this applies to your establishment, it can
be a great way to draw customers during
the winter months. Also advertise as
take out “family style” for upcoming
holiday events.
• Raise A Glass
Make happy hour come back, and for
a three hour period. During this time
incorporate drink specials, as well as
food specials to help people relax and
relieve their stress. This will be a great
way to try new appetizers and entrees to
see how they will sell, and a great way
to get feedback on new ideas. Be sure to
check your local laws regarding alcohol
related promotions and to train your
staff on how to serve alcohol safely.
• Not Always the Norm
Offer Daily Features and Specials that
are a little different. Seafood features,
Beef, Lamb, Chicken, Vegetables & Pork
are all items that can be presented and

• Offer Home Style Favorites
During the Holidays I encourage you
to offer seasonal favorites and to make
them from scratch. When you make
your own items you can advertise them
that way, and word of mouth spreads
quickly. Remember during the colder
months people will eat heavier and are
drawn towards richer foods.
• To Go Meals
There is a lot of take out business at
this time of year, people are busy and
want to make life easy. Make sure that
your take out program is the best in the
area! Have a check list for your staff
so nothing is forgotten. As mentioned
previously; Family Meals To Go really
is a must through the holiday months.
Promote to your customers that you
are offering complete meals ready to
go. Thanksgiving Feast meals can have
everything ready for the customer
to heat up at home, from Turkey, to
Rolls, Mashed Potatoes, and all the
Fixings including Dessert. I know from
experience in the past that this is very
profitable and if done right can be very
easy on your kitchen staff.
cooked many different ways. Offering
a wide variety of items cooked a little
differently will attract customers.
• Make Them Laugh
Create advertisements, promotions or
displays that bring a smile to customer
faces. Try to have upbeat music and
creative menu selections that are
familiar, but maybe have a name twist.
Anything to create a positive and
pleasant atmosphere.

• Offer Multi Course Menus
Attract customers and encourage them
to order more than just an entree by
offering a complete meal for a set price.
Another way is to have a select one
appetizer to share, and choice of two
entrees for a set price, this may catch
the eye of budget-conscious customers.
With these types of offers, you are still
able to upsell for a dessert and drinks.
When you arrange the menu, make
sure the appetizers offered are sized and
priced right to make you money.

A Perfect Blend of
the OLD and the New
My wife Jenny and I recently took our yearly trip to Boston. We arrived at Logan airport
and proceeded to the ground transportation area. Instead of seeking out a cab (which
stereotypically would be an older slightly beat up yellow car with about a quarter of a
million hard miles on it) I pulled out my Smart Phone and went to my Uber app. It was
my first time using it so I was slightly skeptical as to how it would go. I put in our location
and the destination address and chose UberX. Within seconds I received a call from our
soon to be driver. He let me know he was about 7 minutes away. I knew he was telling the
truth because I looked at my phone and it said he was 7 minutes away. It also gave me the
model of the car, license plate number the drivers name and a photo of him. He showed up
and all was good so we made our way to the hotel which was on the West end of Boston.
So we were in Boston - a city founded in 1630. The city that holds much of our country’s
history. Paul Revere, The Old North Church, The Boston Tea Party, Cheers! (The Bull
Finch Pub) - OK that was the old with the new.
We checked in to our hotel and like most people in the food business we started to have
conversation as to where we were going to eat. We were fairly close to Little Italy which is
in the North end of the city. This area is filled with great little family owned and operated
restaurants and bakeries. With this many choices where would we go?
How would we decide? Yelp of course. So I pulled out
my Smart phone and went to the Yelp app and looked
for stars, reviews and ratings for restaurants in the
North end of Boston. Our choice was Dino’s!

We set out on our quest to find Dino’s to get some dinner.
As we started walking down cobblestone streets that our
forefathers were walking over 200 years prior it dawned on
us - we weren’t sure how to get there. So I pulled out my
Smart phone... Hey Siri give me walking directions to Dino’s
Restaurant in North Boston. In seconds Siri answered
and supplied us with step by step directions! We made it
to Dino’s to find a quaint little place with a black board
listing their offerings and about 7 four top tables. There was
a counter with a register on the counter and what looked
to be a traditional Italian family as the workers. We made
our choices and gave them to the lady behind the counter.
We chose our table, of which there were only 2 left and
the other one was full within minutes. Shortly our meals
were delivered by the same person that took our order. Our
dinners were both large enough to feed a family! The quality
of the food was awesome! I of course ate my entire “family
sized” meal.
After dinner we were walking in the neighborhood
admiring all of the businesses and the huge amount of
people walking around. It seemed like the clocks had been
turned back because all of the foot traffic. It was great to
see. After walking for a while we decided it was time to
seek out a good place for dessert. So - you guessed it, out
came the Smart phone! Best cannoli’s in Little Italy (in our
opinion) is Modern Bakery. The line was out the door, the
door had a sign that we had seen many times on our walk.
Cash only. Hmmm I generally don’t carry much cash. You
know, because we don’t have to anymore with debit cards,
credit cards, pay on line... but I confirmed that I had enough
to spring for dessert. We got in line and got 2 cannolis to go.
As stated - they were the best!
Create your own perfect blend of the old and the new. Don’t
lose that family owned “homey” feel and service that your
customers deserve. But also make yourselves visible and
accessible to the Millennial’s (there I said it). A Millennial
is defined as someone who was born in the 1980’s or 1990’s.
This group has a reputation of being more tech savvy than
us uhhum... older people.
Don’t lose that family owned “homey” feel
and service that your customers deserve.
Did you know that orders for take out or delivery coming
into restaurants via mobile devices has doubled in the last
5 years? Are you set up to be able to receive these orders?
Do you have a website with your menu,
photos of your restaurant and
directions to get your customers to
you?
If you aren’t currently “connected”
like this and you aren’t a
Millennial or a “Millennial at
heart” seek out a Millennial from
your staff that is looking to better
their position. Sit down with them
and figure out how you want to be
“connected” to all of these growing
opportunities. Once you have a
plan and it is implemented start
tracking the activity and the new
business that you will get from it.
I think you will be pleasantly
surprised.

We set out on our quest to find Dino’s to get some dinner.
As we started walking down cobblestone streets that our
forefathers were walking over 200 years prior it dawned on
us - we weren’t sure how to get there. So I pulled out my
Smart phone... Hey Siri give me walking directions to Dino’s
Restaurant in North Boston. In seconds Siri answered
and supplied us with step by step directions! We made it
to Dino’s to find a quaint little place with a black board
listing their offerings and about 7 four top tables. There was
a counter with a register on the counter and what looked
to be a traditional Italian family as the workers. We made
our choices and gave them to the lady behind the counter.
We chose our table, of which there were only 2 left and
the other one was full within minutes. Shortly our meals
were delivered by the same person that took our order. Our
dinners were both large enough to feed a family! The quality
of the food was awesome! I of course ate my entire “family
sized” meal.
After dinner we were walking in the neighborhood
admiring all of the businesses and the huge amount of
people walking around. It seemed like the clocks had been
turned back because all of the foot traffic. It was great to
see. After walking for a while we decided it was time to
seek out a good place for dessert. So - you guessed it, out
came the Smart phone! Best cannoli’s in Little Italy (in our
opinion) is Modern Bakery. The line was out the door, the
door had a sign that we had seen many times on our walk.
Cash only. Hmmm I generally don’t carry much cash. You
know, because we don’t have to anymore with debit cards,
credit cards, pay on line... but I confirmed that I had enough
to spring for dessert. We got in line and got 2 cannolis to go.
As stated - they were the best!
Create your own perfect blend of the old and the new. Don’t
lose that family owned “homey” feel and service that your
customers deserve. But also make yourselves visible and
accessible to the Millennial’s (there I said it). A Millennial
is defined as someone who was born in the 1980’s or 1990’s.
This group has a reputation of being more tech savvy than
us uhhum... older people.
Don’t lose that family owned “homey” feel
and service that your customers deserve.
Did you know that orders for take out or delivery coming
into restaurants via mobile devices has doubled in the last
5 years? Are you set up to be able to receive these orders?
Do you have a website with your menu,
photos of your restaurant and
directions to get your customers to
you?
If you aren’t currently “connected”
like this and you aren’t a
Millennial or a “Millennial at
heart” seek out a Millennial from
your staff that is looking to better
their position. Sit down with them
and figure out how you want to be
“connected” to all of these growing
opportunities. Once you have a
plan and it is implemented start
tracking the activity and the new
business that you will get from it.
I think you will be pleasantly
surprised.

People want large, family-style portions
that they can share with others, the larger

During the Holidays I encourage you

quickly. Remember during the colder
months people will eat heavier and are
drawn towards richer foods.
• To Go Meals
There is a lot of take out business at
this time of year, people are busy and
