Battle of Puebla. A traditional dish to
eat on Cinco de Mayo is the chalupa
—a thick, fried tortilla most often
topped with shredded beef or pork,
serving beef barbacoa burritos to
honor the day before heading into
the first May weekend. DID YOU KNOW?
Sour cream is easy to make at home! To make
sour cream, add 2–3 tablespoons of buttermilk
to about 1 cup of heavy cream. Stir the mixture
and allow it to sit still at room temperature
(covered) for 24–48 hours. The acid in the
buttermilk is enough to inhibit bacterial growth
during this time.

sold in supermarkets usually includes a
blend of coriander, turmeric, cumin,
fenugreek, and chili peppers. Some also
caraway, cinnamon, clove, mustard seed,
cardamom, nutmeg, and black pepper.
At HandCut Foods, we makes our own spice
blends, including a curry mix, so that we have
total control over the final product. Our mix is
designed to be delicately spicy and includes
cumin, coriander, sweet paprika, turmeric,
cardamom, cloves, fenugreek, cayenne, salt,
and pepper.

BRISKET
Brisket is a tough cut of meat
because it is part of a muscle group
responsible for supporting 60% of
the cow’s body weight. To
tenderize brisket, a chef must cook
it slowly and over low heat. Our
favorite ways to prepare brisket
include braising it in the oven and
cooking it with indirect heat from
charcoal or wood—commonly
known as smoking.

RHUBARB
Rhubarb is one of the first plants
harvested each spring in the
Midwest. Though it tastes more like
a fruit, Rhubarb is a long, stalked
vegetable that grows in the ground.
It is very tart, which is why it is
often paired with sweet berries or
pastry, like in this week’s cinnamon
glazed rhubarb cake. DID YOU KNOW?
When left to grow in the wild, rhubarb can
reach heights close to 10 feet tall!
