It looks like a weathered bowling ball: a hard, rough, natural
rind surrounds a firm, deep orange paste (colored with
annatto, a seed from a bush indigenous to the Caribbean and
South America) which darkens toward the rind. Far more
flavorful and complex than younger versions, this one is
robust, fruity, and a little earthy near the rind, with a finish
reminiscent of toasted hazelnuts. Sure to garner a lot of
attention at any retail cheese counter.

Small production of a strong artisan-made well-marbled blue cheese.
Handmade, the producers extract their own penicillium roqueforti from
rye bread baked in-house. Like other Roquefort productions, the milk
comes solely from the Lacaune breed – whose yield is notably large
compared to other breeds – creating an intense, powerfully flavoured
cheese. Perhaps fruitier and better balanced than other Roqueforts, the
pate switchbacks beautifully between the creamy curds and grittier blue
moulds. A truly individual cheese.

An uncooked and pressed cheese, Ossau-Iraty is semi-hard in texture
with a thick, buff rind marked with rust and gray molds. Beneath the
brown and orange rind is an ivory white, supple and slightly grainy
interior that has a creamy and buttery mouth feel. Flavours are
herbaceous, nutty and fruity if the produce is from winter while the
summer cheeses tend to reveal aromas of grass and flowers.

at high altitudes in the Italian Piemontes. Beneath Fontina’s brine-brushed rind is a
springy, semi-firm paste the color of turbinado sugar. Because it’s made from raw milk,
the flavors can vary with the seasons, but expect some of the following: floral, nutty,
barnyardy and sweet. It’s never a strong cheese, but there is a bit of a lactic zing on the
finish. Do not confuse PDO-regulated Val d’Aosta, the real Fontina, with imitators; if it
doesn’t say “Val d’Aosta”, it’s not the same cheese.
