The Basics on Protein
The source of protein is always important, that is why you will
hear over and over the importance of eating a varied diet.
Protein is made up of building blocks called amino acids.
Your body makes some amino acids. These are called
nonessential amino acids. Other amino acids must come from
the foods you eat. These are called essential amino acids. A
protein with all the essential amino acids is considered a higher
quality or complete protein. Egg whites are an excellent
source of nutritional complete proteins.
Animal sources of protein such as lean meat, milk and eggs
are complete proteins. A protein lacking one or more essential
amino acids is considered to be an incomplete protein. Plant
sources of protein don’t contain all the essential amino acids
your body needs and are considered incomplete proteins.
How can I be sure I am getting enough complete protein?
You can still get all of your essential amino acids from
vegetable or plant sources if you eat a variety of plant-based
foods. If you feel your diet is lacking in protein, schedule an

quick, complete and healthy meal, a protein shake is an
excellent option.

Mini Moca Swirl Cheesecakes
6 oz reduced-fat cream cheese, at
room temperature, 1/2 c part-skim
ricotta c heese, 2 Tbsp Xylitol
Granular, 1 lg egg, 1 lg egg yolk,
1
/2 tsp vanilla extract, 1 1/2 tsp
unsweetened cocoa powder, sifted
1. Preheat oven to 350 degrees F. Line 6-cup muffin pan.
2. Blend cream cheese and ricotta in food processor until
well combined. Add Xylitol, egg, yolk, and vanilla extract.
Process until smooth.
3. Divide 1 cup of batter among muffin cups. Add cocoa to
remaining batter and combine. Drop a heaping tablespoon
of cocoa batter into each muffin cup and gently swirl.
4. Place muffin pan in large roasting pan and fill with hot
water to reach halfway up muffin pan. Bake until cakes are
puffed and set, 20 minutes. Remove from water and cool at
room temperature for at least 2 hours.

Q: What is Xylitol?
A: Xylitol is a naturally occurring sweetener found in the
fibers of many fruits and vegetables including, but not
limited to, various berries, corn husks, oats and mushrooms.
Q: Does sugar free = healthy?
A: Sorbitol, mannitol or malitol may cause gastric problems
at low doseage. The artificial sweetener sorbitol may
actually increase the number of bad bacteria in your mouth.
Q: What are the health benefits of Xylitol?
A: Studies have shown that there can be up to a 40 percent
reduction of ear infections in children, since Xylitol appears
to have beneficial effects on bacteria in the ear tubes that
connect with the throat. Some experienced relief from
symptoms of acid reflux and heart burn by eating Xylitol.
Allergy or asthma may be relieved with a nasal wash
containing Xyletol.

Holiday Stress
Holidays can be very stressful, too much driving, too much shopping, and too much rushing around. Stress causes acid which
