of vegetables t o families in t h e neighbourhood, a n
i m p o r t a n t d e p a r t m e n t of t h e business is t h e supply of
posies a n d garlands for weddings, together w i t h b u t t o n
holes a n d sprays, while a considerable t r a d e is t r a n s a c t e d
in providing flowers for t a b l e a n d decorative purposes,
a n d t h e establishment h a s become a n accepted centre
for m o u r n i n g w r e a t h s a n d crosses. Miss M a c C a r t h y is
frequently requested t o send flowers, etc., a considerable
distance, a n d a m o n g those w h o constitute h e r clientele
t h e r e a r e included m a n y t o w n a n d county families of
importance. A n d w e h a v e seen some splendid testi
monials from t h e military authorities w h o h a v e been

T h e agreeable m a n n e r in which all dealings w i t h
Miss M a c C a r t h y a r e effected h a s contributed greatly t o
t h e reputation of t h e house, which in other respects
m u s t b e expected t o recommend itself. I t i s t h e nicest

ONE of t h e most important branches of commercial
enterprise in t h e S o u t h of Ireland is represented in
Cork b y t h e old-established house of Mr. W I L L I A M
C A R R O L L , Salt, L i m e , a n d Brick M a n u f a c t u r e r a n d
General Building Material Merchant, which supplies
the subject of t h i s brief descriptive notice. T h i s busi
ness was founded a s f a r b a c k a s 1830 b y t h e l a t e M r .
J . Carroll, a well - known agriculturalist a n d highly
respected citizen of Cork, w h o continued t h e concern
until his d e a t h in 1862, when h e w a s succeeded b y t h e
present proprietor, h i s son. T h e premises occupied b y
this gentleman a r e centrally situated in Anglesea Street,
and comprise extensive yards, store sheds, &c., measur
ing 250ft. b y 142ft., with offices a t t h e entrance. T h e
yards a r e fully stocked w i t h large quantities of I r i s h
and W e l s h slates, laths, nails, cements, plaster of P a r i s ,
flags ferrumite, chimney tops, wind g u a r d s , vases a n d
pedestals, flowerpots, pipes (drain a n d agricultural) ;
Cork, Youghal, a n d Bridgwater bricks ; lime. Blarney
sand, lead, a n d all kinds of building materials. T h e
brick works, situated a t Douglas, a r e of large propor
tions a n d mlly equipped with t h e necessary plant a n d
machinery for producing a sound quality of building
bricks, &c.
M r . C A R R O L L ' S limestone quarries a t
Carrigmore a r e t h e largest in Ireland, covering a total
a r e a of 120 acres a n d producing annually a n enormous
o u t p u t of t h i s material—most of t h e principal buildings
i n t h e S o u t h of Ireland being constructed of t h i s mate
rial, notably S t . F i n b a r ' s Cathedral, Cork, a s shewn in
o u r illustration. T h e salt a n d lime works in t h e W i n d
mill R o a d a r e conveniently a r r a n g e d for t h e s e opera
tions, t h e leading production being d a i r y salt, for w h i c h
t h e house h a s long been noted, a n d w i t h which M r .
C A R R O L L h a s b e e n successful in securing n o fewer t h a n
fifteen Gold, Silver, a n d B r o n z e P r i z e Medals a t t h e
principal agricultural shows a t Dublin, Cork, a n d other
p a r t s of t h e c o u n t r y . Also six Agricultural Society's
Medals for salt. A large a n d steadily increasing volume
of t r a d e is controlled b y M r . C A R R O L L , w h o employs a
considerable n u m b e r of h a n d s in t h e several d e p a r t
m e n t s of t h e business, t h e whole a r r a n g e m e n t s of which
a r e conducted u n d e r his personal supervision w i t h
m a r k e d ability a n d success. M r . C A R R O L L is widely
known a n d respected in t h e district, in which h e h a s
u n d e r cultivation f a r m s of a b o u t 400 acres, a n d , a s a

brandies, &c., f r o m t h e best k n o w n distilleries. T h e
bottling stores i n connection w i t h t h e establishment a r e
of spacious proportions a n d a r e fully provided with t h e
most modern appliances for facilitating t h i s operation.
O n t h e second floor is a suite of well-appointed offices
a n d additional stores for bottled wines. T h e whole
arrangements a r e of t h e most complete a n d efficient
character, a large staff of assistants being employed in
t h e various d e p a r t m e n t s of t h e business (some of w h o m
h a v e been over 50 y e a r s there), u n d e r t h e capable
control of t h e principal, w h o s e close personal super
vision is evidenced in every detail of t h e m a n a g e m e n t .
A n old-established family a n d wholesale connection h a s
b e e n secured b y t h e firm throughout t h e U n i t e d
Kingdom, a n d their extended association w i t h t h e t r a d e
h a s gained for t h e m a widespread a n d influential
clientele amongst t h e leading m e m b e r s of t h e titled
nobility, gentry, clubs, a n d hotel a n d r e s t a u r a n t pro
prietors throughout E n g l a n d a n d Ireland. W e noticed
t h a t this firm a r e extensive holders of old whiskies in
bond, stored in their own s h e r r y casks, which give m u c h
satisfaction t o their n u m e r o u s ordering friends. T h e y
h a v e likewise a n extensive stock of bottled ports,
sherries. Madeiras, a n d clarets in their wine cellars
from 20 t o 40 y e a r s old.

by law. N o w a d a y s , however, of ordinary b r e a d s b a k e r s
m a y b e said t o produce t w o varieties—best w h e a t e n a n d
household. T h e r e a r e m a n y w a y s of m a k i n g b r e a d ; t h e
house a t present u n d e r notice, however, h a p p e n s t o b e
one of those which still follows t h e old m e t h o d . T h i s a s
compared w i t h t h a t a t present practised, consists chiefly
m t h e practice of t h e quarter-sponge w i t h a ferment of
potatoes in t h e process of fermentation. T h i s is t h e
process a d o p t e d b y Mr. D A V I D M U L C A H Y , of 64, N o r t h

t r a d e s m a n i n t h e City w h o follows t h i s practice. M a n y
good b a k e r s of t h e present d a y regret t h a t t h e old
system is dying out, for a b e t t e r article i n every w a y
w a s never produced t h a n t h a t now in ordinary use. T h i s
m a y b e easily g a t h e r e d f r o m t h e fact t h a t inferior flour
w a s n o t capable of being m a n i p u l a t e d b y t h e older
m e t h o d , which w a s displaced chiefly because of t h e
greater expense of carrying it o u t — t h e longer t i m e
necessary in working, t h e extra skill a n d c a r e involved,

finds his m e t h o d p a y s a m p l e proof is f u r n i s h e d b y t h e
exceptionally good t r a d e d o n e b o t h over t h e counter
a n d b y v a n delivery t o all p a r t s of t h e City.
T h e business w a s established some t w e n t y y e a r s
a g o b y t h e present proprietor, a n d t h e premises occu
p i e d a r e v e r y n e a t a n d compact. T o t h e r e a r of t h e
s h o p w e find t h e b a k e r y , t h e general equipment a n d
a r r a n g e m e n t a n d t h e cleanliness a n d order everywhere
noticeable affording ample a n d sufficient reason for t h e
n a m e b y which t h e house is k n o w n in t h e district, viz.
