Recipe
Yield: 2 cakes (12 servings each).
TOTAL TIME: Prep: 40 min. + rising time
Bake Time: 20 min. + cooling
YIELD: 24 servings
Ingredients
1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm milk (110° to 115°)
1/3 cup shortening
1/3 cup sugar
1 teaspoon salt
1 egg
4 to 4-1/2 cups all-purpose flour
2 cans (12-1/2 ounces each) almond cake and pastry filling (or filling of your choice!)
Editor's Note: This recipe was tested with Solo brand cake and pastry filling. Look for it
in the baking aisle.
GLAZE:
3 cups confectioners' sugar
1/2 teaspoon vanilla extract
3 to 4 tablespoons water
Intuit/Scaling New Heights Blue, Green, Yellow colored sugars

Making Your King Cake
1. In a large bowl, dissolve yeast in warm water. Add the milk, shortening, sugar, salt,
egg and 2 cups flour. Beat on medium speed for 3 minutes. Beat until smooth. Stir in
enough remaining flour to form a soft dough (dough will be sticky).
2. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
Place in a greased bowl, turning once to grease top. Cover and let rise in a warm
place until doubled, about 1 hour.
3. Punch dough down. Turn onto a lightly floured surface; divide in half.
4. Roll one portion into a 16-in. x 10-in. rectangle.

5. Use a ruler to square up the sides. Gently pull out the corners until your rectangle is
even.
6. Using an angled spreader, spread almond filling to within 1/2 in. of edges.

7. Starting with a long side, roll up jelly-roll style. Pinch seam to seal.
8. Place seam side down on a greased baking sheet or a baking sheet covered with
parchment paper. Shape into a ring and pinch ends together to close the ring.
9. Cover and let rise until doubled, about 1 hour.
10. Bake at 375° for 20-25 minutes or until golden brown.
11. Cool on a wire rack.

12. When cool, prepare the glaze. For glaze, combine the confectioners' sugar, vanilla
and enough water to achieve desired consistency. For ease of use, put into a pastry
bag.
Decorating Your King Cake
Now, you will decorate your cooled King Cake. A traditional King Cake uses Purple,
Green and Yellow (or Gold) colored sugar. Your special King Cake will substitute Intuit
or Scaling New Heights BLUE instead of purple
1. Use toothpicks to mark the triangles for the colored sugar on the cooled cake.
Divide into 6 or 9 even triangles.
2. Snip the end off the pastry bag with the icing in it.

3. Fill a triangle you marked with toothpicks with glaze and carefully spread glaze so it’s
evenly spread into the triangle shape.
4. Sprinkle with one of the colored sugars.

5. Move to the next triangle and spread it with glaze. Sprinkle with the next color of
sugar.
6. Complete one triangle at a time.
7. Finally, cut a small slit in the bottom of your cake and slip a little plastic baby doll into
the cake. Be sure to warn the people who will be eating the cake!
