[Type text] [Type text] Spiced Apple Raisin Muffins by One Earth Modified using The New Gluten-Free™ Ingredients, Tools & Techniques YIELD: 16 muffins IMPERIAL 1 box 3 lg ½ c 6 tbsp 1 tsp METRIC 1 box 3 lg 125 ml 90 ml 5 ml INGREDIENT One Earth Spiced Apple Raisin Muffins Eggs, separated Butter Buttermilk Baking powder METHOD 1. Separate eggs. Beat egg whites to stiff peak. Beat egg yolks until light yellow and triple in volume. 2. With an electric mixer, beat butter until light and fluffy (about 5 minutes). Add egg yolk foam in 3 to 4 batches. Beat after each addition until butter returns to fluffy consistency then add the next volume. 3. Place muffin mix into a container with a lid. Add 1 tsp of baking powder to flour mix. Cover and shake vigorously to aerate. 4. Alternate flour mixture and buttermilk in three additions to whipped butter and egg yolk mixture starting with flour mixture then adding buttermilk. Beat after each set of additions. Total amount of beating should be greater than 1 minute to fully activate the xanthan gum. 5. Using a spatula, fold in egg white foam OR add egg white foam to muffin batter and beat on low speed until mixture is just combined. 6. Fold in raisins until evenly distributed. 7. Grease 16 muffin tins with spray oil. 8. Using a 2 ounce scoop, scoop batter into greased muffin tins. 9. Bake at 350 ○F (180 ○C or Gas Mark 4) for 18-20 minutes.
