Also known as the Mexican turnip, jicama
is a root plant that is popular in Central
and South America. Jicama has a unique
flavor that tastes great in salads, salsa, or
raw.
While jicama resembles the turnip, the two plants are
not related. This sweet, crispy plant is a member of
Fabaceae, or legu me (bean) family.
Jicama is available year round. When selecting jicama,
choose those that are firm with dry roots. Avoid plants
that are bruised. Size is important. Mediu m-sized
jicama is usually the most flavorful. Jicama may be
stored for up to 2 week in the refrigerator.
Jicama is an
excellent source of
Vitamin C. One
serving of this
legume is equal to
one cup cubed.
