STREUSEL APPLE RAISIN MUFFINS (Adapted from: http://www.canadianliving.com/food/streusel_apple_raisin_muffins.php) INGREDIENTS 1 cup all-purpose flour 1 tsp baking soda 1 tsp baking powder ¾ tsp cinnamon ¼ tsp ground cloves ¼ tsp salt ½ cup packed brown sugar ½ cup unsweetened apple sauce ¼ cup granulated sugar ¼ cup vegetable oil 1 eggs 1 tsp vanilla ¾ cup diced cored, peeled apples 1/4 cup raisins Topping: 1/8 cup brown sugar 2 tsp all purpose flour ½ tsp cinnamon 1 tsp vegetable oil DIRECTIONS STEP 1 Preheat oven to 375°F. Fill muffin tins with paper muffin liners. STEP 2 In large bowl, whisk together flour, baking soda, baking powder, cinnamon, cloves and salt. In separate bowl, whisk together brown sugar, applesauce, granulated sugar, oil, eggs and vanilla; pour over flour mixture. Sprinkle with apples and raisins; stir just until combined. STEP 3 In a small bowl, prepare the topping. Combine sugar, flour and cinnamon; stir in oil until moistened. STEP 4 Spoon into paper-lined muffin cups; sprinkle with topping. Bake in oven until tops are firm to the touch, about 20 minutes. Let cool in pans on rack for 10 minutes. Remove from pans; let cool completely on rack.
