PREMIUM SPARKLING APPLE WINE DOSED WITH APPLE ICE WINE Produced since 1994, NEIGE* Première was the leading inspiration of La Face Cachée de la Pomme (hidden side of the apple). It was the very first apple ice wine to be commercialized in Québec and throughout the world. * NEIGE means SNOW in French. NEIGE Bubble is a sparkling cider made from fresh hand picked apples. Produced using the traditional method (second fermentation in the bole), this sparkling cider is then dosed with our NEIGE Première apple ice wine which makes it unique, special, refreshing and delicate! TYPE: PREMIUM SPARKING APPLE WINE. Produced and boled at the estate. Product of Québec, 7,5% alc./vol. ORCHARD: Located in the Montérégie region, which borders the state of New York. Long ago, the Champlain Sea covered this rocky soil. CLIMATE: Ideal microclimate. Sunny autumn days and cool nights. Long, very cold winters. METHOD: TRADITIONAL (second fermentation in the bole with selected yeast) + 10 % (75 ml) of NEIGE apple ice wine in each 750 ml bole. YIELD: 1 liter = 1,6 kg (3,5 lbs.) of hand picked apples. SUGAR: 120 g/L before fermentation, 35 g/L residual. ACIDITY:5,1/L. GLYCÉROL: 5,8 g/L. PRESSURE: 4,5 bars (65,27’’). WINEMAKER: Christophe Etchebar Autumn harvest. 80 - 90% McIntosh (apple known for its sweet and acidic taste) + 10 - 20% Lobo. From the dosage with NEIGE apple ice wine, we also find some Spartan (very sweet apple with a slight pear flavour). Golden yellow with light reflections. Bubbles are fine, sharp and generous. Sparkling aspect Pure and clean, the aroma reminds fresh apple and white flower. Delightfully light. A perfect balance of sugar and acidity. The whole is limpid and persistent in mouth. Ideal to open the appetite. Perfect at the brunch or to accompany fresh fruits strawberries, carambolas - and shellfish. Serve cold. Ready to serve in any occasion.
