Baking
• Select oven programmes in advance.
• Position the baking trays evenly across the oven rack.

Steam for 18 seconds
Open oven dampers 15 minutes through the baking cycle
Mix on spiral mixer using pre-set cycle.
Manually controlled mixers use 2 minutes slow, 8 minutes fast.
The dough should be uniform and clear at the end of mix.
Dough temperature should be between 26ºC and 28ºC.
Programmed Ovens
Processing
• Scale dough pieces at 260g.
• Process through the bread moulder to achieve a tightly bound evenly
shaped dough piece.
• Coat the upper surface of the dough pieces with Tiger Paste, apply lightly
and evenly with a brush.
• Place dough piece seam down on a paper lined fluted baking tray.
• 10 per tray as shown.

• Handle products with clean oven gloves on oven exit.
• Set aside for cooling before merchandising.
