This year we celebrate the 25th year of using Andrew Freestone turkeys;
born and reared 10 miles form Cirencester. Our strong relationship with Andrew enables us to
give our customers the very best turkeys he has to offer. The full flavour, depth and juicy bite
that creates a Christmas dinner to remember is achieved from our turkeys as they are reared
for eight months rather than the conventional three. Our turkeys are hand plucked and dry
aged to ensure that every bird has an intense, succulent flavour and are a delight to serve.

have water baths to relax in and grass land
to roam. They are able to pick up natural
goodness from the land and natural minerals
that flavour the meat. We have been working
with Andrew for 25 years and Madgett’s for
5 years and have established a fantastic
relationship to get the best birds possible for
our customers.

Beef bred as nature intended.
Our beef is hung traditionally on the bone for a minimum of 28 days in our purpose built
Himalayan salt, dry aging chamber. These methods will bring a depth in flavour and tenderness
to your Christmas feast.
We use quality breeds such as, Aberdeen Angus, Hereford and Long Horn.

We use local Gloucester Old Spot pork crossed with a Large White to give the fantastic flavour
of the Gloucester Old Spot and the Large White allows for a perfectly shaped joint. We also use
Blythburgh pork, which is well known for its welfare standards and depth in flavour.

A butchers’ masterpiece. Our free range legs of pork create an easy carve pork joint. Slightly
leaner than shoulder of pork but still has a good cover of that crackling we all love.

Our Signature Cotswold Grass Fed Lamb
With the fabulous rolling Cotswold hills around us, our specially selected lambs are allowed
to roam and grow slowly on some of the best land in England. We allow our lamb to hang on
the bone for 5 to 8 days. This produces mouth-watering lamb which is incomparable to growth
enhanced production lamb.

The venison is reared on parkland and is
selected for us. With our 7 year relationship
we are able to give our customer the perfect
product.

Our pheasants and partridges are sourced
from Cowley Woods, Gloucestershire. We are
proud to have complete exclusivity of their
birds. Bred on hills these birds are high flying
and are allowed to roam over large areas of
woodland, which increases their texture and
flavour.

Gammons & Bacon
Sandridge Farmhouse Bacon have been supplying us with artisan products for 25 years this
Christmas. With this relationship we are able to source the finest bacon and gammons for our
customers. Sandridge uses a cure that dates back to the 1840s and top grade Oak and Beach
wood in the smoking process.

Vacherin Mont D’or
Colston Bassett Stilton
Only made available between October and
April this unique cheese is made rich due to
unpasteurised milk from alpine pastures.
First grade Stilton, one of the last
independent Stilton makers. It has a mellow
taste and creamy texture. (Available in 8kg4kg and a Baby Bassett)
Stinking Bishop
Made by Charles Martell in Gloucestershire
this cheese’s rind is washed with Perry
(fermented pear juice) made from Stinking
Bishop pears. It is this process that gives the
cheese its rich, powerful aroma and flavour.
Black Bomber
Charles Martell Single Gloucestershire
This cheese is traditionally made thinner than
a Double Gloucester, and tends to have a
lower fat content, hence ‘Single’ rather than
‘Double’ (as in single and double cream).

Stilton Cropwell Bishop
This fantastic cheese has a rich tangy flavour,
and a velvety-soft texture that makes it meltin-the-mouth. To allow this Stilton to develop
its unique flavour it is normally aged it for 12
weeks.
Shropshire Blue
Shropshire Blue is recognisable due to its
distinctive orange body, with blue veins
spread throughout. Like Stilton, the cheese
has a creamy taste and smooth texture with
no bitterness or sharpness.
Where Cheddars are concerned, The Black
Bomber is a multi-award winning one. Comes
as a classic or in several well loved flavours
and sizes.
