Char Kooima, RD, LD, LN
Char is the president and owner of CK Consulting, Inc.
She is nationally registered and licensed to practice
in Iowa, South Dakota, and Minnesota. She provides
consulting for all aspects of nutrition, including
diabetes education, cardiac rehabilitation, sports
nutrition, pediatrics, long term care, eating disorders,
prenatal care, and more. She currently serves as the
Iowa Dietetics in Health Care Communities Chair and is
past Event Coordinator for the Iowa Dietetics in Health
Care Communities Spring Conference.

John Holahan, BS, MBA
John is the president and founder of SimplyThick,
LLC. He is also the inventor of the company’s
patented thickener, SimplyThick. John has worked
with thickeners for his entire business career and
has presented to various long-term care trade
organizations on the topics of dysphagia, thickeners,
and rheology.
Sandra Frahm, RD, LD
Sandra graduated from Iowa State University with
a bachelor’s degree in Food and Nutrition/Dietetics
through the Coordinated Undergraduate Program.
Her work experience includes the provision of clinical
nutrition care, inpatient and outpatient education, and
counseling and food service management through
employment in acute hospitals, at the Iowa Veterans
Home, and as a consultant dietitian. In January 2011 she
joined the Department of Inspections and Appeals as a
Health Facilities Surveyor.

Sarah Petullo, SLP, CCC
Sarah is a Speech-Language Pathologist for the
University of Northern Iowa, where she provides
mentoring to graduate students providing speech
therapy to adult and pediatric clients. She has
experience working with clients with aphasia, traumatic
brain injuries, swallowing difficulties, ventilator
dependencies, cochlear implants, oral cancer, and more.

Paula has thirty years of experience as a registered
dietitian. She holds a B.S. in Dietetics and Community
Nutrition from Iowa State University. In her current
role she serves as the Diabetes Educator for Marengo
Memorial Hospital. In addition, Paula is the Hawkeye
Area District Dietetic Association Treasurer and the
Iowa Dietetics in Health Care Communities chair-elect.
