Raspberry & Blueberry Lime Drizzle Cake
225g softened butter
225g golden caster sugar
4 medium eggs
2 lime, grated zest & juice
250g SR flour, sifted with pinch salt
25g ground almonds
100g each blueberry and raspberry
For The Syrup
8 tbsp lime juice (about 4 limes)
1 lime, grated zest
140g golden caster sugar
Heat oven to 180c/fan 160c/gas 4. Grease/line 20cm (8”) square cake tin.
Cream butter and sugar until light. Gradually beat in eggs, adding a little flour to
prevent curdling. Beat in lime zest, then fold in flour and almonds. Fold in
enough lime juice – approx 3 tbsp, to give good dropping consistency. Fold in ¾
of blueberries and raspberries. Turn into tin. Smooth surface and scatter
remaining fruit on top. Bake for about 1 hour, until firm. Make syrup: put lime
juice, zest and sugar in small saucepan, heat until sugar dissolved. As soon as
cake ready, prick all over with skewer and spoon over syrup. Cool, and cut into 12
pieces to serve
