 Roasted Carrots Serves 2-­‐4 Ingredients: • 1 pound carrots • 1 teaspoons salt • 1 tablespoon olive oil • choice of spice: cinnamon, cumin or chili powder Directions: 1. Preheat oven to 450 degrees 2. Slice carrots on a diaganoal or into carrot sticks for a carrot fry 3. Toss carrots with olive oil, salt and spice 4. Roast in oven for about 15 minutes or until crispy and slightly browned
