Diabetes Living Magazine/Nov. 2015 Great Thanksgiving Dessert! Ingredients 5 cups, ½ inch cubes of light oatmeal or whole wheat bread (about 7 slices) Non-stick cooking spray 1 orange 2 cups fat-free milk 1 cup canned pumpkin ¾ cup Egg Beaters, or 3 eggs 3 tablespoons granulated sugar 1 teaspoon ground cinnamon 1/3 cup light cream cheese spread, softened 1 tablespoon light stick butter (not margarine), softened 3 tablespoons powdered sugar Directions Preheat oven 300°. Arrange bread cubes in a single layer in a shallow baking pan. Bake 10-15 minutes or until dry, stirring once or twice. Cool. Increase oven temperature to 350°. Coat a 2-quart shallow baking dish with cooking spray. Arrange dry bread cubes in prepared dish. Remove 1 teaspoon zest and squeeze 2 tablespoons juice from orange. In a large bowl combine orange zest and next five ingredients (milk, pumpkin, eggs, sugar, cinnamon); pour over bread cubes. Gently press bread down into liquid to moisten. Let stand 15 minutes. Bake 40-45 minutes or until a knife comes out clean. Cool slightly on a wire rack. Meanwhile, in a small bowl beat cream cheese and butter with a mixer on medium until smooth. Gradually beat in powdered sugar and enough of the juice from the orange to reach drizzling consistency. Drizzle over warm bread pudding.
