Egg Substitutes
- Orgran no egg,( trademark)
- Orange juice, for batter or breaded.
- Two tablespoon of ckickpea flour diluted
in water, (texture a bit thicker than beaten
egg), for every egg to substitute, for
omelette, breaded.
- Tofu cut into cubes, as substitute of
boiled eggs.
- Buns exclusively brewed whit wheat
semolina.
- Corn flour, or rice, for custard, and other
linked elaboracines.
- Gelatin added whit in curd desserts, as
custard, and puddings sweet or salty.
- For elaborate cakes, each egg can be
replaced by:
-1 dry yeast tablespoon + 1 vinegar
tablespoon + 1 water tablespoon.
-1 yeast teaspoon dissolved in ¼
water cup.
-½ water teaspoon, ½ oil teaspoon,
1 teaspoon of yeast powder.

LIPID TRANSPORT PROTEINS.LTP
IDENTIFICATION AND TREATMENT
Definition:
-Defense proteins of the plant
kingdom.
- They found in skin, shell, but
leaves inside.
- Cause of many cross-reactions
between plants.
- Resistant to heat and digestion,
and can give symptoms even
cookes.
- No dose-dependent reaction.
Sintoms:
-Local:
Orofarins (SAO) oral allergy
syndrome
-General:
Gastrointestinal:vómiting,diarrhea.
Dermatologic:urticaria,pruritus.
Respiratory:dysnea,wheezing.
-Graves :(Anaphilaxis) whit
involvement of two or more organs.

-All foods that are no related to any
allergic reaction.

-Meat, fish, seafood.
-Potatoes
Avoid:
Salads, sauces, where some food can
be masked..
They can be found in:
-Fruits: rosaceae fruit specially
-Vegetables: (cabbage, lettuce,
tomato, celery, cauliflower,
asparagus, broccoli)
-Cereals: (corn, wheat)
-Nuts (almonds, walnuts, hazelnuts,
peanuts, sunflower seeds, chestnut)
-Legumes: (lentils, beans)
-Polens: weed (artemisia,
parietaria, ambrosia) and trees
(banana, olive)
-Seeds: (mustard)
-Látex
75% people allergic to fruits are also
pollens. Pollen-Fruit syndrome
Treatment:

-Avoidance dietary foods that produce
symptoms. Sometimes can tolerate peeled
fruits.
-Inmunotherapy: peach sublingual vaccine
is avaliable (LTP). Currently undergoing
several studies.
-Biologic drugs. Anti IgE.Reduce the allergic
response. Only for hospital use.
