I am glad we have the winter behind us I am sure a lot of you are, too. We kicked off the start of 2017 with our annual Chicken and Cards at the Lansing Community Center. We had a nice group join us for the day, and everyone enjoyed the dinner and cards. We have some real card sharks out there and also some very good cooks. Which reminds me: one of our members was gracious enough to share her dessert recipe with us. You will find it next to my Lemon Salad recipe. We want to thank Judy for another great job on the chicken and her services to make the day a success. Also, thanks to all of you who brought in those tasty dishes. Our trip to Bloomington, MN is fast approaching. We will be taking in the play Wife Begins at Forty. From what the theater’s producer/ director is telling me, it is quite a crowd pleaser, so be sure to get signed up. The itinerary is on the back of the newsletter. Till next time… Betty Easter Lemon Salad 2 (3oz.) boxes of Lemon Jello 2 cups of boiling water 1 can of Mountain Dew soda 1 cup of mini marshmallows 1 (8oz.) container of Cool Whip In a large bowl, dissolve jello in boiling water. Add cold Mountain Dew and stir well. Stir in remaining ingredients and refrigerate until set. Chocolate Cake Dessert 1st Layer: Cake 2 cups of sugar 1 1/2 tsp of baking powder 1 1/2 tsp of baking soda 1 3/4 cups of flour 3/4 cup of cocoa 1 tsp of salt 2 eggs 1 cup of milk 1/2 cup of vegetable oil 2 tsp of vanilla Beat all together add 1 cup of boiling water, mix again and pour into a greased jelly roll pan. Bake at 350 degrees fro 30 –35 mins. 2nd Layer: Filling 1 (8oz.) pkg of cream cheese 3/4 cup of powdered sugar 3 Tbsps of milk Beat together, add 1 (16oz.) conCLASSIC HERITAGE CLUB CLASSIC HERITAGE CLUB tainer of cool whip and beat until fluffy. Spread on cooled cake. Place in refrigerator and let set up. 3rd Layer: Frosting When filling is cooled, melt 1 stick of butter and 3/4 pkg of semisweet choc chips. (This can be doubled if you like a thicker frosting.) When choc has cooled a bit spread on top of filling. Enjoy!! Recipe by Linda Jacobson And The Survey Says...
