A famous quote by the inspiration for this classic cocktail, Ernest Hemingway. Created at
the celebratedLa Floradita Bar in Cuba, the Hemingway Daiquiri has made its mark across
the Atlantic and is a favourite worldwide. Bacardi Carta Blanca Rum and grapefruit juice
shaken with lime juice and a touch of Luxardo Maraschino Liqueur.
MAI TAI

Said to have been created in 1944 by Victor J. Bergeron a.k.a. “Trader Vic” at his
restaurant in California. As the story goes, some friends were visiting from Tahiti and one
friend, after having tasted the drink, exclaimed “Maita’i Roa ae!” This closely translates to
“Out of this world, the best!” We mix ours with Mount Gay Eclipse and Myers Dark Rum,
orgeat syrup, lime juice and Orange Curacao.
DARK `N’ STORMY

According to legend, the name Dark ‘n’ Stormy was coined by a sailor sometime after
WWI who, while enjoying the cocktail, commented that it was the “colour of a cloud
only a fool or a dead man would sail under.” Made with Goslings Black Seal Rum,
lime juice and Old Jamaica Ginger Beer.

The origin of the Caipirinha is unknown and heavily debated. It is the national drink
of Brazil and has risen to worldwide fame through the rise in availability of Cachaça
exported from Brazil. Sagatiba Pura Cachaça churned with muddled limes, demerara
sugar and crushed ice.

Said to have been created in Chicago in the 1880’s with its name coming from its popularity
in New York during the Prohibition. A Whiskey Sour, made with a crisp rye whiskey and
a “snap” of claret. Rittenhouse Rye Whiskey, lemon juice, sugar syrup and a float of red wine.

Created in 1984 by legendary bartender Dick Bradsell at Fred’s Bar in Soho, London.
A sweet and classic drink that has made its mark in cocktail culture. Unfortunately we
said goodbye to Dick Bradsell in February 2016, leaving his legacy to live on in the

GIN
Gin is a spirit which derives its predominant flavour from juniper berries and is bolstered by the
addition of botanicals. The name Gin evolved from the old English word “Genever” and the Dutch
“Jenever” which in turn originated from the latin word for juniper berries “Juniperus” on which the
beautiful spirit is based.

The term “single malt scotch” refers to a whisky that fulfils all three elements of the term: Single
– the whisky must be from only one distillery. Malt – the raw material used must be barley malt.
