The magic of sweet potatoes. From simple french fries to a delicate pie, holiday dishes to everyday baked
this is an amazing vegetable. A yam is a sweet pot a toe by another name.
BAKED SWEETpotaotes with no salt and no marshmallows !
Ingredients: If cooking for one this is easy to reduce by half
sweet potatoes: 2 1/2 - 3 pounds
[even in size and scrubbed buy the smaller size]
4 tablespoons brown sugar
4 tablespoons butter
4 ounces cream cheese
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Preheat oven to 375 degrees.
[1] Scrub the potatoes so you can bake in skins for about 1 hour to 11/2 hours. Place potatoes on
baking tray for easy clean up and have uniform size for even baking. When soft remove from oven
and allow to cool for easy handling, then cut in half and scoop out flesh into large bowl.
[2] Melt butter over low heat, then add brown sugar and render butter by cooking over low heat,
stirring constantly for about 3 minutes: then add cream cheese and cook till cheese is melted.
Finally add the cinnamon and nutmeg. Set aside.
[3] Mash potatoes with potato masher till sort of smooth and then add hot butter/cheese mix and
continue mashing.
[4] Move to stand mixer and whip on medium to high speed until very smooth.
[5] Move back to oven and reheat to serving temperature
How To Make Sweet Potato Fries
Making sweet potato fries is actually really easy, and totally worth
it. These ones are not super crispy,
but this is the simplest and fastest
way to make them.
Preheat your oven to 375°. Chop
your sweet potatoes into roughly
fry-shaped and similarly-sized
pieces. I never bother to peel them
because the peel is healthy and also
it’s just not worth the fuss.
Throw the fries onto a cooking
sheet and spray or drizzle with oil.
Buttered flavored Pam is great.
At this point you can also add any flavouring you might want: chilli powder, garlic salt, cinnamon (goes
great with sweet potatoes!), or any other spice blend.
Toss the fries around with your hands so that the oils and spices are evenly dispersed, then place in the oven
(keep your rack towards the middle if possible.) Check your fries after about 10 min, and flip them around.
Check them again after another 5 minutes or so; at most they may need 20 minutes
