RECIPE OF THE MONTH FROM
ANESEH ALVANPOUR
PERSIAN TOMATO AND CUCUMBER
SALAD
SERVES 4-6
1 large cucumber
1 large tomato
1 large onion
parsley
salt
1/4 cup lemon juice
1-2 tablespoon olive oil
Chop all vegetables finely. Mix
vegetables with parsley, lemon juice and
olive oil. Salt to taste!

RESIDENT SPOTLIGHT
This month’s featured resident is KEITH
GWOREK. Keith moved to our community
in July 2016, from Virginia Beach, VA.
Keith came to U of L because he was
offered a graduate assistantship in the
College of Education and Human
Development. He received his Bachelor’s
in Kinesiology at James Madison
University. He is pursuing a Master’s
degree in Exercise Physiology. His hobbies
include cooking, weightlifting, and playing
guitar. He describes himself as a “total
bookworm.” Keith would like to pursue a
PhD in Exercise Physiology and do
research in the field of strength and
conditioning. Good luck to you, and thank
you for choosing Cardinal Village to make
your home, Keith!
