sitting down and making a list of things we’d like to change in our lives. For some —
okay, most — of us, that list includes three big items: changing our diets to be healthier,
losing weight, and exercising more.

Did you know that today’s well-known Kombucha drink is
actually a natural folk remedy that has been in existence for
more than 2,000 years? It got its name from a Korean
physician, Dr. Kombu, who treated Emperor Inkyo with this
fermented tea or “Cha” from China, thus Kombu + Cha =
Kombucha.

KEEP HYDRATED DURING YOUR WORKOUT

We all know that with increased exercise comes an increased need for hydration, and for those of
us vowing to move more in 2012, it's important that we remain vigilant about our water intake.
While all water works for keeping thirst at bay, one of our favorite bottled waters on the market right
now is Penta. Its clean, refreshing taste always hits the spot after a particularly enthusiastic round of
kick-boxing, and there have even been studies that have shown Penta might have a leg up on the
competition when it comes to increasing antioxidant activity in your body. Antioxidants are important
for helping keep free radicals from damaging cells in our bodies, which can lead to diseases such
as cancer and heart disease, and these studies have shown that Penta helps to reduce "oxidative

As I was thinking about new year’s resolutions this season, I stumbled across the following description of one of my favorite
cheeses, Piave Vecchio: “…named ‘extra old’ for its extra time in the cellar — an investment that pays off in a rock-hard
body glistening with a deep golden tan.”
After a quick chuckle, I thought to myself, this year I’m going to be more like Piave Vecchio. Now, don’t kid yourself,
I’m not going to work my butt off in the gym or anything … nope, I’m going to spend more time in a cellar!
Okay, just kidding. But all jokes aside, Piave Vecchio is really a remarkable cheese, one that
is often referred to as a young Parmigiano-Reggiano. It’s packed with a broad pallet of
tropical fruits, sweet nuts and berries. If given a glass of fruity red wine, it might
even sing! Come on, who can pass up that?

GIVING UP CHEESE!

So it’s the New Year, and we’re all trying to lose those extra
holiday pounds, right? And, if you’re like me, this year (just
like every other year) you’ve vowed to cut out all fatty foods
(including cheese), reduce your portion sizes and eat a
bland diet of brown rice, lean protein and copious amounts
of vegetables. Sound familiar?
While eating sensible portions and focusing on lean proteins
and lots of vegetables are always healthy diet choices, no
one said you have to lose the flavor too. I say, this year why
torture yourself? Try grating a little Parmesan over your brown
rice, or even indulging in a quick bite of Sharp Cheddar
instead of chocolate as your end-of-the-day treat. New
research studies show that regular cheese consumption does
not elevate artery-clogging cholesterol, and a one-ounce
serving (which goes a long way when grated over veggies,
fish or whole-grains) contains more protein and as much
calcium as a glass of milk.

HOW CHOCOLATE IS MADE

Have you ever looked at a cacoa pod and wondered how
it can turn into the delectable chocolate bar or scrumptious
cup of hot chocolate you love so much? Making quality
chocolate is truly an art that must be mastered, and each
chocolatier has his or her own special technique! Here
is the skinny on how chocolate is produced:
• Manufacturers start the process by roasting raw
cocoa pods. Roasting the whole bean, before shelling
down to the nib (inside of the pod), will result in a
deep roast range and intense flavor. But the nib itself
can also be roasted. This results in a more even roast
and flavor profile.
• Roasted nibs are milled into a brown paste called
cocoa liquor. Cocoa liquor can be further pressed
to create cocoa butter.
• Combining and then churning cocoa butter, cocoa
liquor and sugar for anywhere from a few hours to
a handful of days is the final step to making liquid
chocolate, which is then dried. A key step that
differentiates the quality of chocolate is the length of
time that chocolate is agitated. The longer chocolate
is churned, the smoother and more sophisticated the
chocolate will taste!

Guatemala for six decades. This Reserva won a
Gold Medal at the Ministry of Rum's 2010 tasting
competition. It is a blend of rums aged 5 to 14
years using the same multi-barrel aging process as
their Solera.

As a cheese buyer, I’ve tasted a lot of amazing cheeses, yet more often than
not it’s the classics that really pique my interest. I mean, think about it: new
cheese makers pop up every day hoping to make the best cheese ever, yet
still the classics remain.
To me, Stilton is one such cheese. It’s by far the most buttery of the blues, yet
it crumbles well and has a unique umami quality that begs for another taste.
It tastes fantastic in a rich soufflé, melted over steaks or with lighter fare,
crumbled in salads. By far my favorite way to serve Stilton is with a loaf of
rustic bread, a glass of port and a piece of dark chocolate. It just so
happens that we are right in the middle of Stilton’s peak season, so do
yourself a favor and sample a wedge of this wonderful cheese.

The FishWise color-coded signs make it easy to understand what types of
fish are sustainable. Green signs on our fish are considered sustainable,
while Yellow signs indicate good choices that have some concerns, and
Red signs mean that the item may be over fished or fished not using a
sustainable method.

nutrient-rich foods per calorie: you get Beta
Carotene and vitamins A, B, C, and K, folate

vinaigrette — the tat soi has a nice, earthy,

WHAT EXACTLY IS AN ORGANIC WINE?

A lot has been said recently about the rise of organic wines, but quite a bit of confusion remains about what makes a wine “organic.”
In fact, there are four separate types of these wines: organic wines, wines made from organically grown grapes, biodynamic wines
and wines with no sulfites added.
• Organic wines: These wines carry the United States Department of Agriculture (USDA) organic seal, indicating the wine is made
from 100 percent organically grown ingredients and has been monitored throughout its entire production process. Just like any
organic fruit, these wines have no pesticides, herbicides, fungicides, chemical fertilizers or synthetic chemicals of any kind. The
wine can contain only naturally occurring sulfites. Some say “no detectible sulfites” on the label, which means the current testing
methods cannot detect any sulfites. Example: Our Daily Red Wine
• Wines made with organically grown grapes: This means the wine is made from at least 70 percent organically grown grapes.
It may have artificial sulfites added, and it does not carry the USDA organic seal. Example: Bonterra Wines
• Biodynamic wines: Based on the precise observation and an attempt at balance of nature, a concept originated by the early
20th-century Austrian philosopher Rudolf Steiner. Biodynamic wine is 100 percent organic, and in addition, the grower has gone
beyond to try to bring the farming process more closely in tune with nature. They view vineyards as self-sustaining ecosystems and
the soil beneath them as a living organism. Sulfites may be used, but in very low amounts. Example: Benziger Wines
• The role of sulfites: Sulfites occur naturally in wine during the fermentation process, just as they occur naturally in your body and
many foods. In wine production, the addition of sulfites acts as a preservative used to prevent oxidation and bacterial spoilage,
stabilizing the wine. A wine made with no sulfites will be more fragile and age sooner. White wines are the most fragile as they
do not have tannins, a component in red wines that helps preserve them. There is a very small percentage (less than .5 percent)
of the population, especially asthmatics, that is sensitive to excess sulfites. Any wine with more than 10 parts per million is
required to state “contains sulfites” on the label. Example: Pacific Redwood

Duroc Pork. Duroc is a breed of pig that
excels in meat quality, documented in
tests performed by the National Pork
Producers. Pork is widely known as “the
other white meat,” but the Duroc breed
yields a dark pink to dark reddish pink,
which is the most desirable color to look
for when shopping for pork. Darker
reddish pork typically will be juicier, more
tender and have a higher pH, which is
essential for superior eating quality.
Offering these great characteristics,
Compart has used the phrase “The
Black Angus of Pork” for the Duroc pork
they breed. As someone who loves
eating pork, I must say that this is the
most flavorful and tender pork I have
ever barbecued. Currently in our store
we carry Compart boneless loin chops,
bone-in center cut loin chops and
individually vacuum-sealed pork

MINNEOLA TANGELOS

Love sweet citrus, but hate the seeds? So do we. That’s why we
love California-grown Minneola Tangelos. These began harvesting
in the Coachella valley late in December, and they’re a favorite of
ours every year. This cross between a grapefruit and tangerine hits
its peak of flavor in January. They feature a thin, easy-to-peel skin,
sweet juicy flesh, and yes, a near absence of seeds. Their
orange-like size also makes them perfect for some Vitamin C-rich
juicing. These can be tricky to pick out on the shelf because they
look very similar to an orange, except for one special characteristic:
look for the bell-shaped citrus with an exaggerated bump where
the stem is, and you will have found the Minneola.
STAY HEALTHY THIS WINTER!

It is estimated that the average person contracts more than 50 colds during a lifetime. The cure for the common cold? We’re still looking, but lucky for us we’ve
come a long way from the remedies of the Middle Ages, when colds were treated with roasted mice, leeches or hanging a ball of camphor around the neck.
Today, the best thing to do if you feel really sick is to take a trip to your doctor’s office. However, for minor sniffles and congestion, there may be some things
you can do at home that provide temporary relief. An old-fashioned favorite (of those 21 years of age and older): the hot toddy! It’s ¼ cup whiskey, ¼ cup
fresh squeezed lemon juice and ¼ cup honey. You can either put the ingredients straight into a mug and microwave until warmed, or slow-cook them in a
saucepan. If your toddy turns out too strong, add ¼ cup boiling water to the mixture. This hot cocktail may temporarily help soothe aches and congestion, and
some people feel it helps them get some much-needed sleep. And it tastes good, too!
Here’s another home remedy from Aura Cacia that could help relieve stuffy noses and sinus pressure: Drop one or two drops of Peppermint essential oil into the
palm of your hand, rub your hands together for a few seconds, close your eyes (don’t forget this part), put your hands to your face and breathe in deep … so

far back into history, from a rudimentary bundle of twigs
fastened together, to the modern whisk that appeared at the
end of the 19th century.
Rogue Valley Firewood’s all-natural fatwood fire starter
utilizes a phenomenon long known by loggers and other
woodsmen going back to the Native Americans. When a
pine tree is logged, the roots continue to pump resin to the
stump. This resin is very flammable, and it is now highly
