The Churchill Bar & Terrace has been designed with a young Winston
Churchill and his beloved wife Clementine in mind.
The design
recognises, by way of contemporary touches, references to Churchill’s life
in photography and art, in love and lifestyle and in travel and animals.
We believe the ambience and atmosphere recreates the feeling of a
space that Sir Winston and Baroness Spencer -Churchill would use if they
were alive today.
Our elegant library, curated by local specialist booksellers Daunt Books,
includes a range of literature on modern subjects that a young Churchill
and Clementine would have found fascinating – art, travel, politics,
gardening, fashion and so forth. Please feel free to leaf through the
books as you wish, we hope you find them as fascinating as we do.
Look out for Jock, Rufus and Pig – the locally knitted animals that can be
found on the bookshelves and are used to emulate Chur chill’s use of his
children’s toys as bookmarkers in his library at Chartwell. The animals
reflect the signature pictures Sir Winston and Clementine used when
writing love letters, Sir Winston was a dog (or often a pig) and
Clementine, a cat.
Our private terrace features a specially commissioned life-size bronze of a
young Sir Winston Churchill entitled “In Conversation”.
Cast by
renowned sculptor Lawrence Holofcener who also created “Allies”, the
much loved statue of Sir Winston and Franklin D Roosevelt o n a bench

Unique small-batch pink gin known for its

THE G – DAY HI-BALL
APSLEYS & RHUBARB TONIC
Bombay Sapphire Gin, herbaceous Green
Chartreuse and home-made fiery ginger
lemonade give this drink its name. These
ingredients are combined with the sweet
citrus fruit of Bergamot liqueur to deliver
aromatic, dry and herbal notes in this
superb twist on the classic Hi-Ball.
In 1771 the 1st Duke of Wellington moved
into his new house built on Hyde Park
Corner, now known as Apsley House it still
retains the most prestigious of addresses,
London No.1. We combine the gin that is
named after this moment in history with our
home-made rhubarb tonic to offer a most
refreshing beverage fit for a Duke!

With his mighty roar, Aslan gave life to Narnia
and then began the legend of this mythical
land .In Aslan’s honour we have produced a
drink using Green & Blacks organic Maya Gold
chocolate

cinnamon, vanilla, honey, allspice and cayenne,
heated, then strengthened, with Havana
Maestro Rum and Harvey’s Bristol cream.All
served in a beautiful gold sprayed cobbler glass
fit for the King of the Beasts.
“ALWAYS WINTER, NEVER
CHRISTMAS”
According to Mr Tumnus it was “Always winter,
never Christmas” in Narnia after the White
Witch plunged the land into 100 years of
winter. To keep one warm during this time, the
intriguing taste of zesty Green & Black’s
Organic Lemon Chocolate is heated with the
Patron Silver Tequila, Limoncello and grapefruit
bitters, delicately heated then paired with
house-made Thyme and Lemongrass syrup.
Served straight up with a garnish of grated,
baked Meringue.
THE TOFFEE TREE
Inadvertently created by Polly Plummer
dropping one of her toffee sweets on the
enchanted ground whilst journeying through
Narnia, the toffee tree is the epitome of fantasy.
Utilising the flavour of Green & Blacks organic
Burnt Toffee chocolate we add Somerset Cyder
Brandy, lengthen with rice milk and a touch of
Antica Formula. Served with a silver apple and
a scrumptious piece of house made fudge.
BEAVER’S BREW
Mr. & Mrs. Beaver graciously take the Pevensie
children in to their cosy abode in an otherwise
unforgiving, frosty forest. Whilst the children
enjoy milk and warm food, Mr. Beaver quietly
sips his home made brew by the fire. We
believe Mr. Beaver would enjoy the intense
flavour of Green & Black’s Organic 85% Cacao
with Harviestoun Old Engine Oil porter and the
subtle spice of Bacardi Oakheart. This is heated
with brown sugar and cream. Served in a
copper mug, the Beaver’s Brew is the perfect
welcome to our snowy wonderland..
EDMUND’S TEMPTATION
The cruel White Witch enticed Edmund with an
“enchanted Turkish delight and a hot
beverage” so that he would betray his siblings
to the evil Queen of Narnia. This act is
recreated using the alluring tastes of Amaretto,
Galliano, Cherry Herring and honey with the
subtle smoky aromas of Chivas 12yr whisky.
Balanced perfectly with orange, chocolate
bitters, cloves and cinnamon then topped with
house-made Green & Black’s white chocolate
and Rose water foam and a Turkish delight.
THE WHITE WITCH
The self-appointed Queen of Narnia ruled for
1,000 years having being made immortal by
eating a magic apple, this also cursed her with
white skin and a dark heart .The deep flavours
of Woodford reserve Bourbon added to the
whiteness of milk and double cream are
sweetened with brown sugar with a mouth watering touch of fresh chilli and ginger to give
that wicked twist. Topped with Green & Black’s
Organic White Chocolate house-made foam
and a luxurious chocolate swirl.

THE WINKLE
We have specially created this drink to honour the Winkle Club, which was formed i n 1900 by the
Hasting’s fishermen to help the under privileged. Winston Churchill was made an honourable
member in 1955. We have combined Pussers Rum, issued to the British Royal Navy for over 300
years, with Sir Francis Drake’s use of lime juice to fight off scurvy, chai syrup and spices. Earl Grey
tea is also used, a salute to the Great East India Trading Company a testament to the trade routes
which the British Empire controlled for so long. In addition, from the Garden of England, Kent, we
have added a splash of fresh apple juice, and is served in a coupe glass.
For each Winkle served, one pound will be donated to the Winkle Club.
THE BOTANIST
Winston and Clementine spent much of their time in the gar dens of Chartwell, and botany played
a large part in their lives as we know them. From the summer gardens of England we combine
potato-based Chase vodka with honey and lemon for balance, Greengage liqueur and home -made
basil and ginger juice to add a delightful green hue and zingy finish. We top this off with the
quintessential ladybird resting on a leaf!
WINSTON’S ONESIE
Winston invented the “Siren suit” so that the people of England could maintain their dignity when
faced with rushing to air-raid shelters in the middle of the night. Now christened the “Onesie”, we
honour Winston’s ingenious invention through soothing warm milk which is flavoured with house made porridge syrup and Angostura and chocolate bitters . Add to this the smooth notes of
Angostura 1919 Rum and you have a libation to relax and warm to. Served in the cosiest glass you
will ever see.
NEVER GIVE IN
This cocktail was specially created by The Churchill Bar team using our very own exclusive Gin,
distilled by Sacred to a specific recipe, as the base, Green Chartreuse to represent medicine given
to the injured, absinthe to represent bravery and courage and finished off with smouldering fresh
rosemary for its purifying qualities and to symbolise the smoke that Sir Winston would have
defiantly looked upon from the roof of the War Rooms .

CHURCHILL MARTINI
FIG OLD FASHIONED
Legend has it that Sir Winston Churchill liked his
Martinis served without any vermouth added to the
drink, only present in the same room. He is quoted
as saying “Glance at the vermouth bottle briefly
while pouring the juniper distillate freely”. Together
with Sacred Distillery, we have created our very
own Churchill Craft Gin with a careful balance of
fresh botanicals, made in London only a few miles
from The Churchill Bar & Terrace. Enjoy this Martini
how Winston himself would have it or make it a
Gibson with our own pickled onions instead of an
olive.
Makers Mark Bourbon and our home-made
rosemary syrup are combined with a dash of
Churchill Bitters and garnished with a ripened
confit fig half and an orange twist.
THE ICE QUEEN
Sweet vanilla notes of Galliano combined
with Makers Mark bourbon and hazelnut
liqueur making this creamy cocktail a pleasure
to drink. We finish the drink with a homemade bourbon and Galliano foam atop a
caramel crown fit for a Queen.
SNAP DRAGON
We salute our Welsh cousins with a most
original creation. Penderyn Sherrywood
whisky, produced in the heart of welsh
valleys, is complemented with dry La Ina Fino
Sherry and Benedictine liqueur. Served
straight up and finished with the unusual
combination of orange marmalade and
sesame oil this cocktail leaves a subtle nutty
flavor on the end of the tongue.
WAR ROOMS MARTINI
Our very special Churchill Craft Gin is mixed with
War Rooms Bitters, a concoction made from the
very essence of moisture from Churchill’s secret
wartime bunker. Garnished with a pickled baby
beetroot washed in Churchill Gin to finish off a truly
unique martini.
PRIM AND PEPPER

Winston Churchill would spend hours on
Lake Como in Italy painting beautiful scenes,
and the creator of Casamigos tequila also lives
on the shores of this famous body of water.
The peppery notes of Casamigos Blanco are
complemented by freshly ground, homemade black pepper syrup, the freshness of red
pepper juice (rich in antioxidants) with a
touch of lime to taste. The glass is rimmed
with Cajun salt to add a smoky touch to this
curious libation
ALCHEMY

The death of King Alexander and the
subsequent period of instability in Scotland
was lamented in an early Scots poem: “Oure
gold was changed into lede”.We have
honored his legacy by combining Dalmore
cigar malt, La Ina dry sherry and our secret

We take you through an exploration of flavours and experiences with a range of recognised
international classic cocktails to choose from:
GIMLET
CLOVER CLUB
Another classic cocktail making a grand
resurgence, this bright pink libation makes up
for its striking colour with a very sophisticated
taste. Born in Pre-Prohibition Philadelphia, it is
said to be named after an informal drinking
club whose members met at the bar of the
Bellevue Hotel. We shake Bombay Sapphire
with fresh raspberries, caster sugar, lemon juice
and egg white for a silky smooth elegant drink.
DAIQUIRI
It is generally accepted that the American
engineer, Jennings Cox, first invented this drink
whilst working near the town of Daiquiri in
Cuba. It is believed that in 1896, when
entertaining some VIPs, Cox ran out of his gin
supply so offered his guests a local mixture of
rum and lemon juice and added granulated
sugar to soften the bitterness. This modern
version mixes Bacardi Superior Rum with freshly
squeezed lime juice and caster sugar for a
perfectly balanced cocktail.
It is said that a British naval surgeon, by the
name of Gimlette, first served this classic
cocktail as a way to get his sailors to drink lime
juice and prevent scurvy. We enrich this classic
recipe with our own home-made lime cordial
for a beautifully simple yet classic union of lime
and Plymouth Navy Strength Gin.
PISCO SOUR
Like all cocktails the history of the Pisco Sour, is
shrouded in myth. Being the proud British bar
that we are, we prefer the version that
attributes the creation of the Pisco Sour to Elliot
Stubb, an English Steward on the ship
"Sunshine" who disembarked in Iquique,
Peru, to open his own bar. Elliot soon made the
Pisco Sour his house speciality. We have
stayed traditional to Elliot's method and shake
Pisco with fresh lime juice and sugar. We then
add a little egg white and our own Churchill
Bitters for a true South American classic.
SINGAPORE SLING
Some credit the creation of this classic to
Ngiam Tong Boon, a bartender working at the
Long Bar in Raffles Hotel, Singapore around
1910–15.
This classic recipe balances the
herbal sweetness of Benedictine, Dry Cherry
Brandy and Bombay Sapphire Gin with the
sourness of fresh lemon juice, orange and
Angostura Bitters, topped with pineapple juice.

BREAKFAST IN BLENHEIM
Winston Churchill was notably partial to a
traditional full English breakfast, after which he
would often enjoy his first cigar of the day. Our
award-winning summer twist on the Bloody
Mary combines Chase smoked vodka with a
home-made bean and tomato soup and a
secret British spice mix. This cocktail was
recently voted the best ‘Smoky Chase Cocktail’
in the world. Served with bacon, egg, sausage
and cherry tomato - suitable for those with
even the most Churchillian of appetites!
CHURCHILL’S MULLED WINE
Mulled wine is a staple of any British Christmas,
so at The Churchill Bar & Terrace we have
created a delicious version. Churchill LBV Port is
heated with a full-bodied red wine, Courvoisier
Exclusif VSOP Cognac, lemon and sugar to
create a beautifully warming winter drink.
Finished with star anise and an orange twist
and served in a cobbler.
WINSTON’S MY TIE
Trader Vic’s friends exclaimed that the original
Mai Tai was “out of this world”, and we think
they would feel the same about our distinctly
Churchillian take on the most famous of Tiki
drinks. Pusser’s navy rum from the British Virgin
Islands provides the base, with Chase
marmalade vodka and fresh marmalade
providing the bitter sweetness and home-made
porridge syrup lending richness and a uniquely
British touch.
“I AM EASILY SATISFIED WITH
THE VERY BEST”

Honouring another famous Churchillian quote,
we use one of the most splendid spirits
available - Dictador 20 year old Colombian rum
- and take inspiration from a classic
Boulevardier cocktail. Dictador is stirred down
over lavender smoked ice with a bitter Italian
liqueur, Cynar and the classic flavourings of
Campari. Presented in crystal carafe and
poured over a perfect ice ball.
COLONIAL CUP
An American classic with a British Twist. Made
with City of London Gin (distilled in Fleet Street,
a stone’s throw from the first gin houses from
over 200 years ago) this classic is infused with
camomile agave syrup and mint which are
matched with the sweet vanilla notes of
Galliano to create this refreshing and quirky
alternative to the traditional Mint Julep. Served

WOODFORD RESERVE FUME
Woodford Reserve Bourbon is delicately mixed
together with Lapsang Souchong Tea from China to
create a smooth yet smoky flavour. The addition of
home-made walnut syrup provides a nuttiness that is
a perfect complement. Garnished with an absinthe
flamed walnut, this is surely a tea like no other before.
OLD FASHIONED GENTLEMAN
The first recorded definition of a cocktail is
“stimulating liquor, composed of spirits of any kind,
sugar, bitters and water” from 1806 which
encompasses an old fashioned. Gentleman Jack
provides the spirit which is stirred together with
orange bitters, brown sugar syrup and ice. Served
with an orange peel and some bourbon infused
cherries, it is a drink any gentleman would happily sip
on.
SOUTHERN MANHATTAN
A drink created in Manhattan with a touch of the
South. We combine the unique Jack Daniel’s Single
Barrel with Antica formula, angostura bitters and a
touch of maraschino cherry juice that results in a well balanced Manhattan.

HEDGEROW BRAMBLE
The Bramble is considered to be one of the most
significant gin cocktails in the last century. Bombay
Sapphire Gin is shaken together with lemon juice to
which we add crushed ice. A combination of freshly
picked wild berries from the hedgerows of the English
countryside and crème de mure are used to make a
coulis that is slowly poured over the ice resulting in a
fruity, refreshing cocktail.
MAÎTRE DE CHAI
Throughout many languages in the world, the word
chai means tea. In the Grey Goose distillery the cellar
master holds the title of Maître de Chai. Followin g the
tradition of Indian chai, where spices such as
cinnamon and cardamom are used, we have created
our own home-made chai syrup. This is then shaken
with Grey Goose Vodka, Cointreau, lime juice and
absinthe which takes your palate through Asia and
Europe.
BRITISH RAJ MOJITO
A Churchillian twist on the classic Mojito. Between
1858 and 1947, the Indian subcontinent was under
the rule of the British Empire and referred to as the
British Raj. Bacardi Superior Rum along with brown
sugar syrup, lime, mint, chili and home-made ginger
beer honour the ties between the two continents.

Johnnie Walker whisky formed the basis
of Winston’s daily whisky and water. In
homage to this we combine Johnnie

CHURCHILL’S CLEMENTINE
CHAMPAGNE COCKTAIL
First recorded in Jerry Thomas’s 1862
book ‘How To Mix Drinks’ where he
mistakenly specifies this as a shaken
drink.
Our version of the Classic
Champagne Cocktail pays homage to Sir
Winston Churchill and his beloved
Clementine. We soak a brown sugar
cube with home-made Clementine Bitters
and Hine Rare VSOP Cognac then top
with Churchill’s favourite Champagne,
Pol Roger.
RHUBARB AND ROSEHIP
BELLINI
Our twist on a classic Bellini, using a
beautiful combination of bittersweet
rhubarb and the floral sweetness of
rosehip to complement Prosecco. This
drink delivers a clean fresh palate with a
