Born in Santiago, Chile, Chef Sam began
working in his family’s restaurant at a young age.
He was fascinated by the creative environment
and fast-paced lifestyle. In 2005, he attended
the Universidad Autonoma de Guadalajara in
central Mexico, where he received his Culinary
Arts degree. He has since developed several
restaurant concepts and has been a driving force
in his culinary environment.
In 2011, he relocated to San Antonio, Texas,
and joined the culinary team at the Omni
Hotels and Resorts at the Colonnade. His
authentic ingredients and flavorful creations
have been dubbed “Latin Soul Food.” His
passion for honest and simple food with fresh
ingredients paired with his multi-national
background provides a dining experience that
should not be missed.

Have a Healthy New Year
Make this year a good one by making healthy choices. Here are some goals to
get you started:
Schedule checkups and screenings: Older adults need a complete
physical once a year, as well as additional screenings for conditions such
as osteoporosis. Ask your doctor what is appropriate for you. During your
annual exam, discuss any medications you’re taking, prescription and overthe-counter.
Set a fitness goal: If you don’t already exercise, set a goal to be more active in
the new year. Go for a walk with friends, attend a fitness class, or try yoga or
water aerobics. If you already exercise regularly, great! Keep it up this year by
introducing new activities to your routine.
Improve your diet: Lots of people go on a diet after the new year begins, but
quickly crash and burn. A smart way to avoid this is to start with a simple
goal: Maybe you want to cut back on caffeine, choose fish once or twice
a week, eat a piece of fresh fruit with breakfast, or enjoy a handful of nuts
every day.

Memories of 2015...Happy New Year 2016!
Emerald Oaks opened seven months ago, and the very first residents moved into their new homes. We celebrated The Fourth of
July, and the community was decorated with American flags and red, white and blue. Aug. 1 was our Official Grand Opening,
and we brought that in with style. We “traveled” to Hawaii for a pretend vacation, and the Theatre was the perfect spot for a Luau
and Ukulele band. In September, we celebrated Grandparents Day, and residents and families were treated to a Musical Concert.
October was full of fun fall activities; Oktoberfest, a Carnival, Halloween games and Trick or Treating. In November, we honored our
Veterans and dedicated our Wall of Honor. On Thanksgiving Day, families joined together for a traditional meal. Over 160 people
were fed in our dining room. December brought the excitement and sounds of Christmas. We began the season at Emerald Oaks
with an official tree lighting. Residents, their families and special guests celebrated the 25 days of Christmas by attending concerts and
movies in our Theatre, shopping on Mainstreet, Holiday Singalongs, The Christmas Dance and The Christmas Dinner.
