This cuvée takes only the juice pressed from the heart of the grape, kept in aged barrels where it ferments slowly, giving nature a free hand. It has a nose of white blossom, candied citrus and pear, and in the mouth the pleasant acidity of the chenin is accompanied by an attractive roundness. The finish in the mouth has a hint of almond cake and confectioner’s custard. The grapes are harvested when very slightly over-ripe, adding roundness and offsetting the natural acidity of the chenin. Clos de l’Elu is the perfect accompaniment to the lemon meringue tart with Plougastel biscuit. Domaine Damien Laureau, « Les Genêts » Savennières 2012 75cl € 90 Prices in Euros inclusive of tax – VAT included Clos de l’Elu, « Bastingage » Anjou Blanc 2014 Winemaker Damien Laureau has 8½ hectares of vineyards. This cuvée grows mainly in sandy soils on top of schist. This wine offers a pleasant sweetness but without leaving any residual sugar. In the mouth it starts off with the same fluidity and soundness, followed up by a good length. The estate has made leaps and bounds in the way it defines its terroir, and the “Les Genêts” cuvée becomes more finely tuned each year. It features on the wine list of some very prestigious restaurants. It goes wonderfully well with the duck foie gras cooked at a low temperature with pear and spiced mulled wine. Rhône Valley Domaine François Gérard, « La Côte Chatillon » Condrieu 2014 75cl € 120 Winemaker Xavier Gérard has taken over at the helm of the family property and plans to divide up his tiny four-and-a-half-hectare vineyard a little more. A nose typical of viognier, with suggestions of apricot, yellow fruits and white fruits. A wonderful liveliness, something seldom found in this appellation which is the result of the very cool soils and climate of Côte Chatillon. The altitude and soils in which it is grown give it a slight flintiness with a hint of lemon, along with its pleasing vivacity and long length. Note that there are only 2,000 bottles for the whole world… The perfect accompaniment to the walnut tart on Breton shortbread base with walnut praline and meringue. Domaine François Gérard, Côte-Rôtie 2013 75cl € 130 These are the first vines on the estate, created from scratch in 1980 by the father of the current winemaker Xavier and assembled by gradually buying up little parcels of vineyard, something rarely found in Côte-Rôtie. A full, rich wine from a dense and well-structured 2013 vintage which never departs from its remarkable freshness. The vines grow in prestigious terroirs, making this a wonderfully powerful wine. Xavier Gérard is one of the very few winemakers to own a few hundred square metres of the famous ‘La Landonne’ terroir, Côte-Rôtie’s most prestigious. Try it with the dry-aged beef burger with Beaufort cheese, grilled bacon, ginger and soya crème served with French fries. LANGUEDOC ROUSSILLON Domaine la Croix Sainte Eulalie, Saint-Chinian « Baptiste » 2013 75cl € 45 A family winery taken over by a dynamic woman Agnès Gleizes. The wines have her feminine touch, in particular this ‘Baptiste’ cuvée. With its highly complex nose, it progresses from roasted, chocolatey notes to lightly candied black fruits, with both fig and blackcurrant present too. In the mouth it is certainly rich but also extremely elegant, with a wonderful acidity that refreshes the palate. Grown in schist and limestone soils in the heart of Languedoc Roussillon, it brings an incredible freshness to the distinctly Mediterranean climate. No surprises here: a fine wine from a fine terroir. Goes well with the confit shoulder of suckling lamb for two cooked for 7 hours, with Berber mountain spices, fine-grain couscous and dates. Mas Conscience, « Le cas de conscience » Vin de France 75cl € 49 Nathalie and Éric Ajorque gradually took over the Mas Conscience estate in the early 2010s. Their steadfast approach to viticulture is very honest, centred on biodynamics and respect for the terroir. At the Mas Conscience, each separate parcel of vineyard makes a corresponding cuvée. Recommended with the beef meatballs and potato gnocchi, Comté cheese, coriander and wild garlic. Domaine Haut-Lirou « La coquine, les trois poules » Pic Saint Loup 75cl € 39 The Haut Lirou winery has been run by the Rambier family for five generations in parcels growing in the optimum location at the top of the Pic. This cuvée is made from a blend of equal amounts of syrah and grenache, matured in vats to create an explosion of fruits tending towards blackcurrant, raspberry and blueberry with a great aromatic intensity. In the mouth, the syrah brings a touch of spice and white pepper to create a wonderfully fresh balance. This cuvée’s arch enemy is the wild boar, which can’t get enough of the grapes once they have reached maturity. As a result, the owner owns the largest private hunting ground in the region in order to protect his vines. Try it with the duck confit parmentier with foie gras terrine and salad of tender young leaves. « Off-Piste » wine list Alcohol abuse is dangerous for your health « Le cas de conscience » is made solely from the carignan grape, grown in silty, quartzy soils and matured in the vat for 12 months. A fruity wine in which wild strawberry dominates, with bold tannins. The 60-year-old vines deliver a beautiful balance, revealing the carignan grape in all its glory. The act of conscience hinted at on the label is the winemakers’ decision to snub the constraints of the Terrasses du Larzac appellation in their decision to make a wine solely from the carignan grape to celebrate the way this vine matches so perfectly with the terroir it is grown in.
