We source our beef from Mey Selections, part of the
Prince Charles, produced using traditional methods on family
farms and crofts. All cuts are 28-day aged then grilled in a
charcoal-filled Inka oven, which operates at the extremely high
temperature of 500ºC, allowing for meat that is very tender
with a distinctive flavour.
