Mix salt, sugar, fennel fronds and lemon zest in a bowl. Place a piece of plastic wrap that is three times the width of the salmon fillet on a work surface. Spread half the cure across plastic evenly. Place the salmon, skin side down on the cure. Cover exposed flesh with the rest of the cure, pressing down firmly. Toss fennel slices, fennel seeds and pepper in a bowl. Sprinkle evenly across the top of the fish. Wrap the fish tightly in plastic wrap and refrigerate for two days. When itвЂ™s ready, rinse the fish with cold water to remove excess salt. Pat salmon dry, de-skin and slice each side into Вј-inch slices. One person was still missing, police said. The man who died this morning at a Miami trauma centre had been trapped for about 13 hours following the collapse of the five-storey structure that was under construction at the west Miami-Dade campus, said Miami-Dade police spokesman Javier Baez. Miami-Dade Police Lt. Rosanna Cordero-Stutz said rescue crews were saddened to learn that the man pulled from the rubble had died. They had spent a good part of yesterday communicating with him before he was taken to the hospital early today. How closely do you think Colin FarrellвЂ™s character, Marty, matches him? Were there more real-life elements in the movie? SR: Oh yeah, thereвЂ™s an autobiographical element to the character. CW: I remember when we did the play, I got my upstairs neighbours, where I live in New York, some tickets. After, I asked them what they thought, the woman said, вЂњIt had so many layers!вЂќ I said to Martin, вЂњMy neighbour said your play has layers,вЂќ and he said, вЂњNo it doesnвЂ™t! It is what it is вЂ“ layers, what are you talking about?вЂќ So in the movie, weвЂ™re out in the desert, and Sam does a big speech about how he envisions MartyвЂ™s screenplay, and I (added), вЂњI like it! ItвЂ™s got layers!вЂќ So that was a rare time when he did (change the script) based on real-life. SR: And when your character says, вЂњIвЂ™d make a good pope,вЂќ thatвЂ™s something you said in rehearsal. CW: IвЂ™ve always thought IвЂ™d make a good pope.
