We continue to work hard on our newsletter but we always seem to get it out late. I want to apologize for that. It takes a couple department managers to gather their information to get this out to you and most of the time it is I, that holds up the last piece. Attention Independent Living Residents INGREDIENTS 1 cup chocolate cookie crumbs 3 tablespoons white sugar 1/4 cup butter, melted 1 (10 ounce) package frozen raspberries 2 Tbsp. white sugar 2 tsp. cornstarch 1/2 cup water 2 cups white chocolate chips 1/2 cup half-and-half cream 3 (8 ounce) packages cream cheese, softened 1/2 cup white sugar 3 eggs 1 tsp. vanilla extract PREP 1 HR, COOK 1 HR, READY IN 10 HRS DIRECTIONS In a medium bowl, mix together cookie crumbs, 3 tablespoons sugar, and melted butter. Press mixture into the bottom of a 9 inch springform pan. In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds. Now that the dining room has more seating, you guys are welcome to come for lunch at anytime between 11:30 and 1:00. Please remember to wait to be seated by our lovely kitchen staff. Thanks! Preheat oven to 325 degrees F (165 degrees C). In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth. In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect. Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce. Her parents wanted to get out of the city and her grandparents lived here. After graduating from Olathe High School, Vanessa went to school to get her nursing license and she got married. Her and her husband John have been married for 7 years and had their first baby girl in May. Little Delainey takes up 95% of her time, but she says, “It’s totally worth it and it’s awesome. I wouldn’t have it any other way”. The other 5% of her free time she likes to cook, and spend time with her family. John works as a plumber for her dad’s plumbing business. This month marks Vanessa’s 4th year as the Resident Director at Crossroads. The best part about her job is all the residents. They make her smile. Vanessa says, “Its also great having great co-workers”. Vanessa, thank you for all you do for Crossroads and the residents. You are such a blessing and we are so lucky to have you here. Norma was brought into this world in Archuleta County before moving to Covina, California. This is where her and her younger sister, Claudia grew up. They really enjoyed playing with dolls when they were younger. Claudia still lives in California. After high school Norma got married. Her and her husband had two girls; Mary and Sherri. Norma and her husband lived in California until his passing several years ago. She then moved to Delta to be closer to her daughter. In Norma’s working years, she kept busy by being a Real Estate Broker. She really loved her job and enjoyed every part of it. Norma used to go fishing a lot, which was one of her favorite parts of living in Colorado. Norma likes to paint and read books. She also enjoys walking as much as her feet will allow her to. Sherri and Mary both have one child, making Norma a lucky grandma of two. If you ever see Norma in the hallway, she gives really good hugs! Norma, you are so nice to everyone around you and you are so caring. You are always looking beautiful in your pretty shirts. Vanessa Doyle Norma Bunzel February Independent Living Resident of the Month Audrey Myers New Residents Independent Living A few of us are not Delta natives and had a long car ride to get here. For Audrey, she spent 10 days on a ship followed by two train rides before she made it to Eckert. She traveled all the way from England in 1946 to be with her husband Jim. Her and Jim met while he was stationed in her hometown during the war. Audrey grew up in a small fishing town. During the war there were no private cars, but there was a good bus system and they rode their bikes around a lot as well. Audrey was a young lady of 20 years when Jim swept her off her feet and brought her to Eckert. She recalls being sick for a couple days on the ship to New York. There were many young women from that ship on her train to Chicago and there were only 3 of them on the train to Denver. There were several things those ladies had never seen before and one of those things were tea bags. Jim grew up in Eckert on a family farm where they raised beef cattle and grew hay and corn. Jim and Audrey spent about 60 years on that farm together. Audrey has been a resident of Crossroads for over a year now. She enjoys eating lunch with everyone, taking walks, and knitting. Audrey, you are such a sweet lady. We love having you as part of our Crossroads family! Many cities drop fruit, and that is what we did here. We said good-bye to 2014 and hello to 2015 with snacks, champagne, sparkling cider, and the drop of an orange. QUILT SHOW S&B Quilters brought quilts to share with our residents as a preview to their Cabin Fever Quilt Show in March. The club was delighted when some of our residents brought their quilts and told their stories. Each quilt has a history and has a story. The mutual sharing of quilting memories and achievements made for a pleasant and inspiring gathering. S&B’s mission is “…to promote quilting, and to expand and enhance knowledge and enjoyment of quilting and quilting techniques in an atmosphere of sharing fellowship”. You can find out more information about S&B Quilters through their Facebook page or their website. TURQUOISE POTATO NECKLACES This craft is one of the residents’ favorites. The process starts with the pealing, cutting, and drying of potatoes. Once the potatoes have dehydrated it is time to paint them with different shades of turquoise. As soon as the paint is dry the potato beads are strung onto a necklace and Waa-laa, you have a fancy turquoise potato necklace. You can find these handmade necklaces for sale during our Annual Craft Sale in November. MEMORY CARE PROGRESS Every month there is visible progress on the memory care building. The project is projected to be open this spring. This new addition to Crossroads will be assisted living that specializes in dementia and Alzheimer’s care and it will be a secured building. We will be excited to show off the beautiful building when it is finished so keep an eye out for our grand opening.
