However, a 3 bread item can be offered if you make a 3 bread day each week. All alternates that day would be 3 breads or less and the offerings on the other days would be 2 breads in high school and a 1 bread day in Middle School to meet your bread min/max for the week. Lettuce 2 3/4 cups Sour Cream Chef Boyardee Ravioli Casserole Recipe 3 Equivalent Grains Low Bread Day Elementary/Middle School Menus Make one day a week a “low bread day” when only items that meet 1 bread are offered, again including all alternate offerings being 1 bread. Chef Boyardee® Ravioli Whole Grain MaxStix® Ingredients • 35 oz. Pre-cooked Ground Beef Crumbles • Pam® release spray • 1 - #10 can Chef Boyardee® Beef Ravioli (64144-81060) • 5 oz. Shredded Mozzarella Instructions Spray 12" x 20" x 2" pan with PAM. Spread one can of ravioli in pan. Spread meat mixture on top of ravioli. Sprinkle cheese over meat. Cover and bake at 375˚F for 30 minutes or until heated through and internal temperature reaches 165˚F. Recipe yields 24 servings (4 pies) which equals 1 bread and 1 m/ma. Serve along with a MaxStix® cheese filled breadstick and the meal will equal 2 breads, 2 m/ma and 1/4 cup vegetable. EXAMPLE: Menu Chef Boyardee® Ravioli (64144-81080) (4 pies = 1 protein and no breads) and a MaxStix (77387-12439) offers 1 bread and 1 protein OR a Whole Grain MaxStix® (77387-12685) that offers 0.75 breads and 1 protein can be served with Tomato soup or Bean soup (could count as vegetable) and crackers. Identify your student’s favorite lower calorie entrées and their favorite higher calorie entrées and offer all of the low calorie entrées the same day and the high calorie entrées on an opposite day. That will make the weekly averages easier to manage with alternate offerings, etc. 4 Fulfilling Vegetable Requirements Incorporate the dark green and red/orange vegetables into the main entrée once per menu cycle to change up the offerings.
