Regarding the whole organic/biodynamic thing…
Wine Dive is a leader in the promotion of sustainable, organic and biodynamic viticulture. We like to focus on high-quality, artisinal,
estate bottled wines of distinction.
What you will rarely see though is the front of the label splattered with “certified organic” to share in the “green” marketing phenomenon.
Many of the producers are certified, while others choose not to for cost sake but do farm organically.
It is not surprising that high quality wines come with quality minded viticulture. Like a computer...you put crap in, you get crap out. Many
wines never have the chance to be great because frankly, they are starting with the wrong raw materials. Overcropped, pesticide and
chemical fertilizer infused grapes are never going to make profound wine that shares in the connection with the site in which it was born.
We here at the Wine Dive like to drop a little knowledge on our guests from time to time. Here is a breakdown of a politically correct
definition of Biodynamic / Organic viticulture:
BIODYNAMIC - ∆
Biodynamic is a method of farming that treats the vineyard as a living organism. Based on a philosophy created by Austrian scientist
Rudolf Steiner in 1924, who was also the founder of the Waldorf school system, Steiner created the “spiritual science” of anthroposophy,
which was to understand science through the spiritual world. Because the soil is treated like a living organism, it is therefore necessary to build its “immune system” and maintain its health. Since
pesticides and chemicals tend to deplete the nutrients of the soil, biodynamic methods ban the use of both. Instead, following lunar and
cosmic patterns, homeopathic methods called “preparations” are used to nurture and protect the soil from pests and disease. For
example, Preparation 500 calls for Cow manure fermented in a cow horn, which is then buried and over-winters in soil. In short, the goal
of biodynamic farming is to be in tune with the totality of life forces affecting the growth of the plant.
There are two main factors that make biodynamic farming distinctly different from organic farming. The first is the use of a complex
system of herbal sprays and composting techniques, known as “preparations.” The second is the timing of the operations on the vineyard,
which is strictly regulated by the movements of the spheres. Demeter (www.demeter-usa.org) is the international organization that
certifies and monitors biodynamic farmers around the globe.
ORGANIC - Ω
The grapes are grown naturally without the aid of pesticides or chemicals. In order for this method to be successful, the farmer must
maintain the soil through regular plowing and applications of organic composts. They also encourage biodiversity as well as cover crops to
help create a stable environment. Certified Organic producers must follow rules and regulations in addition to a certification process
administered by Organic certifiers. Notice the symbols Ω and ∆ next to many of the wines while you’re perusing our list. The Σ will represent wines that are both organic and
biodynamic. We’ve added these to help you make an informed drinking decision, if you’re into that sort of thing. If not, drink up!!

Sparkling Wine
EVERYDAY FIZZ |
Just because the wine is fizzy, doesn’t mean it is Champagne. In fact there is a great deal of French sparkling wine
produced that cannot be called Champagne. Italian Prosecco and Spanish Cava are the most widely known examples. While both of these can be
tremendous, don’t overlook the other regions listed below. Here at the Dive, we encourage you to start your meal with a glass of fizz. It will
calibrate/cleanse your palate and start your meal off on the right foot.

CRISP & CLEAN | A glass of water. Gin & Tonic. Lemonade. What do these have in common? All very refreshing. This is an
adjective that is way too overlooked. The notion that wine must be powerful and oaked is total nonsense. These wines are meant to
be fun to drink with or without food. Wines that whisper at you more than shout, caress rather than grope. Get it?

AROMATIC & FLORAL | Have you ever bitten into a rose petal? Smells floral and sweet, but doesn’t quite taste the same.
The same can be said for much of this selection. The aroma leads you to believe that the wine is much sweeter than it really is.

SAVORY DELIGHT | These wines bring into play the fifth dimension of flavor, savory. While these are clean, crisp and a
touch aromatic, they have a structured body. A few of these may have a touch of oak, but no more than that. Grapes like Grüner

IRON FIST IN A VELVET GLOVE | Pinot Noir and Nebbiolo, two grapes that pack a lot of punch but come
packaged in a soft, fuzzy wrapper. These grapes epitomize the idea of power without weight. You may call these grapes “thin,”
but look beyond the color. The intricacies lie deep in the glass, well past the initial aroma or even the finish. In addition, we can’t

Big Fruit – Low Grip |
Looking for some big fruit and a lot of power, but without the cotton-mouth feeling? Look to Zinfandel,
Grenache, Dolcetto and Barbera, and our favorite unknown grapes Gamay, Mencía, Zweigelt and St. Laurent. We’re probably leaving a few out, but feel
free to peruse. These varietals cry out for the sun, you can taste the sunshine in each glass.

beautiful start and finish but lacks a mid-palate. This “hole” in the Cab is filled perfectly by Merlot. Merlot is lively, juicy, seamless
and captivating (when done right). Merlot is on a nice rebound right now after a little fall from grace over the past few years.

Late Harvest | What happens when you pick a grape much later than usual? The sugars are much higher, thus resulting in a
sweeter wine. The selection here are naturally sweet wines using the late harvest process rather than fortifying (adding alcohol). The
natural acidities are apparent. There are two whites and two reds each of which is flat out yummy and appropriate for many things.

Canadian Whisky | Smooth is the one word that comes to mind with Canadian whiskies. They are generally a blend of multiple gy
grains, with corn being the primary one. The style is lighter than American Bourbon. The flavor is similar at times to American rye whiskey
as traditionally the Canadians used a large percentage of rye. Crown Royal has taken its place atop the mountain of whisky here.

Arak - The spirit of Lebanon
Selections are served by the shot on ice with a side of water do dilute as you wish, but first a quick dose of knowledge:
Arak, commonly called ‘Lion’s Milk’ is a traditional spirit that is popular throughout Lebanon, Iraq, Syria, Jordan, and Israel. Arak
is made by distilling fermented white grapes and then adding high quality anise for flavor. It is aged in clay jars before release.
Arak is pure with no other added ingredients other than water. This makes the process similar to cognac with the exception of anise
and oak aging. Arak is usually served on iced mixed with 1/3 to 2/3 water. This dilution causes the clear liquor to turn to a
translucent milky white color because of the essential oil in the anise. Arak is commonly served with mezza, which may include
several traditional dishes but it is great anytime. If you do not like black licorice flavor, then sadly this drink is not for you. We
have plenty of other libations for you to indulge your palate with.
