Wine Dive The List Regarding the whole organic/biodynamic thing… Wine Dive is a leader in the promotion of sustainable, organic and biodynamic viticulture. We like to focus on high-quality, artisinal, estate bottled wines of distinction. What you will rarely see though is the front of the label splattered with “certified organic” to share in the “green” marketing phenomenon. Many of the producers are certified, while others choose not to for cost sake but do farm organically. It is not surprising that high quality wines come with quality minded viticulture. Like a computer...you put crap in, you get crap out. Many wines never have the chance to be great because frankly, they are starting with the wrong raw materials. Overcropped, pesticide and chemical fertilizer infused grapes are never going to make profound wine that shares in the connection with the site in which it was born. We here at the Wine Dive like to drop a little knowledge on our guests from time to time. Here is a breakdown of a politically correct definition of Biodynamic / Organic viticulture: BIODYNAMIC - ∆ Biodynamic is a method of farming that treats the vineyard as a living organism. Based on a philosophy created by Austrian scientist Rudolf Steiner in 1924, who was also the founder of the Waldorf school system, Steiner created the “spiritual science” of anthroposophy, which was to understand science through the spiritual world. Because the soil is treated like a living organism, it is therefore necessary to build its “immune system” and maintain its health. Since pesticides and chemicals tend to deplete the nutrients of the soil, biodynamic methods ban the use of both. Instead, following lunar and cosmic patterns, homeopathic methods called “preparations” are used to nurture and protect the soil from pests and disease. For example, Preparation 500 calls for Cow manure fermented in a cow horn, which is then buried and over-winters in soil. In short, the goal of biodynamic farming is to be in tune with the totality of life forces affecting the growth of the plant. There are two main factors that make biodynamic farming distinctly different from organic farming. The first is the use of a complex system of herbal sprays and composting techniques, known as “preparations.” The second is the timing of the operations on the vineyard, which is strictly regulated by the movements of the spheres. Demeter (www.demeter-usa.org) is the international organization that certifies and monitors biodynamic farmers around the globe. ORGANIC - Ω The grapes are grown naturally without the aid of pesticides or chemicals. In order for this method to be successful, the farmer must maintain the soil through regular plowing and applications of organic composts. They also encourage biodiversity as well as cover crops to help create a stable environment. Certified Organic producers must follow rules and regulations in addition to a certification process administered by Organic certifiers. Notice the symbols Ω and ∆ next to many of the wines while you’re perusing our list. The Σ will represent wines that are both organic and biodynamic. We’ve added these to help you make an informed drinking decision, if you’re into that sort of thing. If not, drink up!! Ω - Organic ∆ - Biodynamic Σ - Organic & Biodynamic Sparkling Wine EVERYDAY FIZZ | Just because the wine is fizzy, doesn’t mean it is Champagne. In fact there is a great deal of French sparkling wine produced that cannot be called Champagne. Italian Prosecco and Spanish Cava are the most widely known examples. While both of these can be tremendous, don’t overlook the other regions listed below. Here at the Dive, we encourage you to start your meal with a glass of fizz. It will calibrate/cleanse your palate and start your meal off on the right foot. Arak is made by distilling fermented white grapes and then adding high quality anise for flavor. It is aged in clay jars before release. Arak is pure with no other added ingredients other than water. This makes the process similar to cognac with the exception of anise and oak aging. Arak is usually served on iced mixed with 1/3 to 2/3 water. This dilution causes the clear liquor to turn to a translucent milky white color because of the essential oil in the anise. Arak is commonly served with mezza, which may include several traditional dishes but it is great anytime. If you do not like black licorice flavor, then sadly this drink is not for you.
