HISTORY
La Chapelle, the jewel of Maison Jaboulet, has a rich and emotive history. During
the 13th century, a knight called Gaspard de Sterimberg settled in the hills of
Tain l’Hermitage with the permission of Blanche de Castille. On his return from
the crusades, he sought calm and serenity and isolated himself as a hermit, hence
the name of the Hermitage appellation. There he built a Chapel, overlooking the
Rhône Valley.

Hermitage “La Chapelle” is a blend of terroirs, including the prestigious hillsides
of Méal and Bessards. Each one provides its own aromatic characteristics, as well
as an elegant tannin structure, giving the wine great ageing potential.
The diversity of “terroirs” on these lands gives our wine an identity of its own,
thanks to the blending of grapes from different plots.
Grapes are brought down from the slopes of l’Hermitage on small sledges, after
which they are sorted by hand and vinified in a traditional way at the winery.
Final blending is carried out during the ageing process and is done through
judicious selection from the different terroirs of l’Hermitage. La Chapelle is aged
in wood at the ancient “VINEUM” cellar for 15 to 18 months.
Since the legendary 1961 vintage, which was classed as one of the “Twelve
mythical wines of the 20th century”, Hermitage “la Chapelle” has become one of
the world’s most sought-after wines.
AUTHENTICITY
In order to guarantee the authenticity of La Chapelle wines, since September
2008 each bottle dispatched from the Jaboulet cellars has been fitted with a
unique Prooftag Bubble Seal - a capsule with a 13-numbered code which
authenticates individual bottles and a unique bubble code that cannot be
reproduced. The combination of the bubble code and the alphanumeric code
enables you to authenticate your bottle and access information about the bottle,
previously registered by the domaine.

CAPOVILLA GRAPPA & DISTILLATI
Owner Vittorio Capovilla has chosen to distil his Grappa using small stills that he has
especially built for him by an old German artisan. He has also chosen to use an
artisanal distillation method for his products, via the very high quality bain-marie
method, which employs a discontinuous distilling cycle. This means that at the end
of every boiling cycle of the marc or pomace, the cycle must be interrupted and the
pot emptied and refilled with other new marc or pomace. The discontinuous cycle
still can be of three types (direct fire, bain marie and flowing steam) depending on
the manner by which the pomace or marc is warmed up, and the bain marie method,
though slow and labour-intensive, is particularly famous for extracting aromas and
flavours that are highly refined and intense.
Capovilla is also well known for his use of very low levels of sulphur dioxide, and of
only very ripe fruit grown in high hillside vineyards. Four hectares owned by Capovilla
are officially organically farmed, and the estate has gone out of its way to select old
varieties of plums, pear and peaches (among other fruits) that are now rare but of
very high quality. Capovilla is especially interested in developing Grappa and Eaude-vie that are not just fragrant and perfumed, but also full bodied and rich.

Fine and rare wines, including Jaboulet La Chapelle, are bought and sold
constantly around the world and can change hands several times and cross
various continents before the contents are enjoyed by the final buyer. The
problem with that is, whereas several previous owners would seriously dent the
value of your car, there is no such thing as a “Log Book” to record the ownership
of wine and work as a check and balance to differences in quality and relative
values.
Therein lies one of the inherent drawbacks of buying wine on the open market you don’t know who and how many owners it has had, and with the global nature
of wine collection, which corners of the earth it has travelled to. Apart from the
obvious dangers of corked wines, temperature variation and exposure to light
are the biggest enemies of these delicate liquids. Who’s to know the wine hasn’t
been stewing on a hot, humid Singapore dock before making its way to Britain?
Thankfully, Galvin La Chapelle’s association with Paul Jaboulet Aîné means there
is no need to fret over the provenance of any of their wines on this list, old and
new, since all the wines have been shipped to the restaurant directly from
Jaboulet’s cellars in Tain Hermitage; enjoying the perfect storage that are so vital
for the older, delicate wines in particular. Once they have arrived at La Chapelle
they are kept in our state of the art temperature controlled wine storage facility,
so you can be certain that your bottle of 1961 remains as true to its character as
the day it was bottled.

'Always 100 points, still 100 points. From a vintage with a minuscule crop and great
summer weather through the end of the harvest. Dark at the core, it lightens at the edge
to the color of prune juice. Full-bodied, it lays thick on the palate, with loads of ripe berry,
plum, mineral and game character. Intense and harmonious. Should hold for years; drink

'Deep, dark molasses. Gloriously rich, “vegetal” nose. Musky, meaty - mixture of beef and
lamb! Exotic cinnamon and coffee too. Toffee taste. Great richness. Great plummy fruit. So
soft and melting and yet huge layers of flavour. Forget this vintage of La Chapelle at your
peril. Drink now.'

'Full, mature colour. A point. Very lovely nose. Ripe, fat, vigorous and very classy. The
fruit is very concentrated. Very succulent. Round and rich and complex. Totally together
and not a hint of age. Full, rich, even more vigorous than the 1966 if not quite as cool and
classy. More structure. A faint touch of astringency. But splendid fruit and concentration.
Splendid class and intensity. Not so long and mellow at the end as the 1966 but another
very fine wine indeed.'

'Full colour. Now looking as if, at long least, the wine has finally reached maturity. Very
composed, extremely vigorous, very lovely concentrated, subtle flavours. Real depth and
dimension here. Yes, finally ready. Now à point on the palate. Full-ish. The tannins now well
absorbed. Indeed no hard edges. The wine is very complex, marvellously harmonious and
very, very long on the palate. Sweet finish. Sublime! A splendid wine. A great Hermitage.'

'From a great vintage, with two months of fine weather that lasted through the harvest.
Full-bodied, balanced and still lively, with richly flavoured plum, blackberry, leather and
smoke notes. Very expressive on the nose, it's more acidic and expressive that the '64,

'Very good colour. But not as full as either 1988 or 1990. Lovely nose. Fat, rich and ample.
Plenty of substance. Lots of concentration. Not too cooked, which some 1989s are, sadly.
Succulent and full of charm. Full-ish on the palate. Rich and abundant, with very good tannins
and a surprisingly good acidity. This is not as classic as the 1988, nor as monstrously exciting
as the 1990, but it is ripe and flamboyant and balanced and seductive. The most forward of
this brilliant trio of vintages. Very blackberry in flavour. Long and lovely. Very fine.'

'Mature but deep colour. Majestic bouquet of utter complexity. Nose of a pot pourri of
flowers. Deep dried apricots. Riveting mocha and raisins. Incredible taste of currants, dried
apricots, tar and cassis. Great wine. So seamless all through. Extraordinary layers of fruit.
The fruit profile is so young. It leaps out of the glass at you and lasts so long in the mouth.
Still great black fruit and yet with maximum aromatic complexity. Startling.'

in its terroir, it springs to life with a symphony of flavours, from mineral to wet earth and

'Mature but deep colour. One of the best bouquets of the whole tasting. Extreme fruity
richness. Quite wonderful scent of great breed. Heady marinated raspberries – perhaps
marinated in La Chapelle ’69! Intense and lingering – totally addictive. Great “vegetation”
and fruit richness on the palate. The tannins are drying but are overlaid with complex
dried fruit flavours of figs and prunes. Fascinating. A very “adult” wine. Great diversity and
individuality of flavour.'
