Sharpham Park in Somerset. Certified organic, it can be

this is the first edition of ForkKnifeSpoon to be
delivered by post. We're hoping this will mean we
can reach many more of our customers, keeping
you up-to-date with goings-on at Turners.
In this month's issue our cover story, and perhaps
this month's most interesting development is the
brand new range of chocolates from Paul Wayne
Gregory. Having tested them extensively in the
office we are sure they will be very popular and it
is a pleasure to be working with such an artist that
really is at the top of his game.
Our main feature looks at the much spoken about
fifth taste component - umami. The sensation that
you just can't put your finger on but that makes you
keep going back for more. We look at the array of
products that you can have in your larder to boost
the umami in your food.
Springtime sees a new influx of seasonal products
and it is with great glee that we welcome back
the famous Nutbourne tomatoes. Always in great
demand and Gary Griffiths and his team are one of
our favourite producers to work with, so get in touch
with the Fresh Produce guys if you can see a place
for them on your menu.
While we are on the matter of Spring, the cheese
this month looks at a selection of British cheese
chosen by our cheese expert Greg, that are
particularly good this time of year.

Cobble is a naturally rinded, unpressed, uncooked

Originating from the Berber
communities of North Africa,
couscous is a popular food staple in
many parts of the world. Essentially
small balls of pasta, varieties that
we use in the West are pre-steamed
and dried, thus making it a quick
and easy ingredient to prepare.
Definitely a store cupboard staple.

Originating from central America, annatto is the seed of
the achiote tree. Used a lot in Mexican and Caribbean
cooking, it imparts a rich yellow or orange colour into
food, as well as a very subtle earthy flavour. The seeds
are rock-hard and do
require grinding down
before being
used.
Annatto is
famously
used in cheese
making as
the colouring
that makes
Red Leicester red.
Couscous
A raw milk, ash coated pyramid from Pete
Humphries at White Lake. Akin to many
of the great Loire cheeses, clean tasting,
creamy, with a hit of salt and sharpness
on the afters. Matured for 2-3 weeks, this
develops natural spotting of mould growth
if it matures beyond 3-4 weeks, and
becomes a little spicy.

UMAMI!
Most of us probably grew up happy in the knowledge
that we were able to experience four taste sensations,
but in recent times a new component has been
scientifically proven to exist...Umami. Whether we know
it or not, we have all experienced umami. Essentially
it is the taste of brothiness or meatiness. The savoury
flavour that we find irresistible, and which makes us
keep going back for more.
In Asia, umami has long been understood and indeed
this is where the name comes from; the combination of
two Japanese words 'umai' 'delicious' and 'mi' 'taste'.
Asian cookery is understandably packed full of umami
enhancing ingredients, but it can also be found in any
number of other sources. Meat, cheese, fish, olives and
vegetables such as tomatoes and mushrooms are all
natural umami givers, but if you are looking for umamirich products that you can keep in your store cupboard
to call upon as and when you need to give your dishes a
savoury lift, then here are a few ideas.

ALEX KILBY
Alex has been at Turners for almost two years and is in
charge of all our graphic design (including this newsletter),
photography, website and marketing. Joining us with 10 years
experience at graphic design and marketing agencies, Alex
has relished the opportunity to focus on developing one brand.
He loves the fact that there is always something to keep him
busy and that he gets to work on so many different projects.
In his free time Alex is a passionate foodie, which he puts
down to growing up learning recipes from the French side
of his family. He also tries to take full advantage of having a
lot of chef-colleagues by hassling them for new recipe ideas
whenever he can.
His other passion is house and techno music, and after having
first picked up a set of headphones when he was 17, Alex had
a stint as a part-time DJ, playing at numerous notable clubs
around London and the South-East along the way.
Alex loves to holiday at the house music mecca of Ibiza but
his favourite holiday of all-time was his honeymoon in the
Maldives, which he says was out of this world.
